I have this dream of one day being able to play something that's basically Minecraft but in the Fallout universe. Now obviously, Fallout 4 allows you to create settlements and build stuff and it's actually really fun but it's not quite what I'm after especially since I feel it's a bit too generous with what you can do even with limited resources and skills. And of course it's not the main focus of the game.
What I'm looking for is a sandbox game or maybe a roguelike, something where you have to careful manage items and use your skills to survive and also be able to set up a home base, explore the lands and survive by scavenging, hunting, trading, maybe even farming.
The closest to what I'm looking for would probably be Cataclysm: Dark Days Ahead but while it is an excellent game, I think it's a bit too difficult at times plus I am somewhat put off by the fan-servicy aspect where it mashes elements from other games together (like having some monsters that are obviously from Left 4 Dead). I also feel like it focuses a bit too much on combat.
I also recently got Caves of Qud which I heard a lot of good about and very Fallout-like but I haven't probed that one deeply enough to tell you if it really is what I'm looking for.
So, do any of you have something to suggest?

7 days to die is worth checking out (PC version. I haven't heard good things about the console ports.)

7 days to die is worth checking out (PC version. I haven't heard good things about the console ports.) It does look interesting although I'd like a bit more variety than just zombies. Especially since I'm going through the Dead Rising games so I think I'll have my fill of zombies for a while.

At least it has a variety of zombies , there's more than 20 different kinds, a few of them have unique abilities. Dead Rising 2 was fun, but I'm enjoying 7 Days to Die more. I don't blame you for wanting a break from zombie games though.

I haven't played it, but do know it's a sandbox game that got high marks.

I haven't played it, but do know it's a sandbox game that got high marks. I did play it and it is very good. Sad it has seemingly been overshadowed by Fallout 4 which was released soon after (and is also excellent IMO). That said, like you mentioned, it's more of an action game, really (it shares many similarities with the Arkham games which isn't surprising considering they were both published by Warner Bros). It doesn't have the randomized aspect where you have to slowly discover everything through exploration and scavenging that I'm looking for. But if you guys like the Mad Max universe, I highly recommend it. It's a great game on its own right, it gets the atmosphere and look of the films right and it takes elements from all of them.

I dont think it qualifies really and is kind of old but I am addicted to playing Sunset Overdrive. I pretty much play it non stop. Its such a fun game.
