For me the answer is easily Little Britain, as it was still fresh then and as such you didn't know how every routine/catchphrase went. Seems second season on, they went even deeper in catchphrase mad libs as well.

Any show by Ryan Murphy...apparently. From his catalogue, I've only seen Popular & Glee and those definitely hooked you in the first season...and most gave up watching sometime during the 2nd one.
The first season of The O.C. was one of my favorite seasons of any TV show ever. But, even then, I knew they had "blown their wad". Nothing left for Season 2.

Friends.
The first season had all the quirky characters, and their shortcomings in love and life. Then, about midway through Season 2, the Ross/Rachel dynamic became the absolute focal point of the show, and it just became one fanfiction cliche after another.

The OC, for me anyway, although most people I know love it all the way through. The first season was great - sure it was car crash TV in the sense that they splurged a bunch of stuff out that could easily have been extended without detracting from the quality but it was still great. After that, and probably because of that, the show went really downhill. It was like they'd used all their good storylines in the first season and then just went with whatever bullshit came to mind in seasons 2, 3 and 4. Which is, again, a shame because they probably crammed 4 awesome seasons worth of storylines into that first season.

Andromeda. The first season was a surprisingly good and unique space opera that was building up a very interesting mythology that I was very invested in. The first half of season two was ok, but quality just plummeted as the second season came to an end and by season three it was just a bad Star Trek rip-off. By season five the only reason I was still watching was because Lexa Doig was insanely hot.
