Subway in Australia is alright. Gonna guess it's not the same case in America.

I don't know what kind of tuna they use but it's delicious Does subway offer donairs in Alberta? Nope. I still don't know how donairs are only popular in some Canadian regions or most of Europe and not in America. Like I don't know McDonald's has a McDonair or a McDonair meat burger.

I still get pizza subs from there fairly often. Never really had another sub place admittedly but I've always liked Subway a lot.

This is one of those questions like, "Is everyone from Nebraska an asshole?" and "Why are all sitcoms so terrible?"
It's a subjective question looking for a concrete answer when the answer varies depending on region and experience. There are some absolutely terrible Subways and there are some amazing Subways... just like how there are amazing Walmarts and terrible Walmarts, amazing Nebraskans and terrible Nebraskans, amazing sitcoms and terrible sitcoms.
The real answer is, the Subways you frequent may have gone down in quality due to the natural change in management and employees or in a more extreme case, your tastes may have changed over time to where Subway just no longer sounds good to you when you want to get something to eat.
There are too many variables to say, "Yes, Subway is still awesome," "Subway was never awesome" or "Subway has become meh" because my experience will differ from yours and, no matter how standards and practices may work... it's impossible for any business to deliver the exact same service and experience at all locations all the time, for the extent of their life as a business.

I'm poor and I live in a spot without a proper kitchen, so any food is good food. But Subway is so much more emploee based than any other fast food. I can eat McDonalds across three counties and it all tastes the same. But Subway is designed for you to "build" your sandwhich, which can lead to a much larger margin of error. For a while, I was going to Subway every other day, now I've moved and the nearest one is meh. I always get everything on it, so it's all about knowing the proper portions of veggies.
