The whole egg/onion/potato sulfur-sweet-peppery combo is most of the reason the standard American Mayo tater salad is so good.
Eggs don't touch my German Potato salad though.

I do not put eggs in mine but that is because I only make German potato salad which I don't think eggs would work well in. I could see them being alright right in a more cream based potato salad but I don't really make those or eat them.

Walmart had amazing deviled egg potato salad, it was the best thing I've tasted till I tried their loaded patato salad that had bacon and shredded cheese in it.

Yeah, I put eggs in my potato salad, along with onion and mayo.
And I eat it while the potatoes are still warm.

Eggs are what make it potato "salad", otherwise it's just au gratin potatoes with relish, onion and mustard.

I like about anything where potatoes are a big ingredient. I also like things like egg salad and macaroni salad. However potato salad is something I absolutely can not stand. What always gets me though is how many people think I am weird because I can not stand potato salad. When someone say potato salad is good I always remind them that my cat thinks rats are good too. I don't care what you put in it, just don't put it in front of me and expect me to eat it.
