What is the most recent thing that you've cooked or baked, yourself, for the first time and had it turn out amazing? I'm curious.
I like to cook. I like to bake. Fairly recently I had a craving for chicken soft tacos. Can you blame me? They're delicious. I searched online for an easy recipe, and boy howdy did I ever find a good one. It goes like this:
Step 1) Place 4 boneless, skinless chicken breasts (about 2-2.5 lbs) in a slow cooker and season with salt & pepper (optional, depending on what you use in step 2).
Step 2) Pour 16 ounces of salsa (about a jar) over the breasts.
Step 3) Cook on High for for 4 hours or Low for 6-8 hours.
Step 4) Shred, toss with the juices in the slow cooker, and serve appropriately.
It's really simple and comes out amazing every time.
I used peach & mango salsa this last time I made it (I've made it a few times now) and it was just so damned good! It's so good. Just remember that any salsa you use will not be as spicy at the end, it will be diluted by a lot of chicken juice - so don't be afraid to spice it up.
I also made candied pecans for my mom, but that's not really a recipe. That's just making a simple syrup, dipping some pecans in it, and letting them dry.
