I've been marathonning How I Met Your Mother lately, and I thought back to the first episode of the show I ever watched: The Best Burger in New York. I was going through a really bad breakup at the time, and even though it wasn't a Ted-centric episode, something about it just resonated with me, so I always made sure to catch the reruns, and when I finally got Netflix, I made sure to watch as much as I could. Regadless of how it ended, that show has a special place in my heart.
So I ask, what episode that wasn't the premier got you hooked on a show?

First episode of It's Always Sunny I saw... Mac Is A Serial Killer. It features a lot of moments like Dee and Dennis chasing The Waitress as clowns and the ending with Frank revving the chainsaw as well as a few of the show's running gags. It's not surprising that I became a fan of the show after seeing that episode.

The Skywalker Ranch episode of Big Bang was the one that really made me pay attention to the show.

Now that I think about it, I've started most shows from the beginning. I do remember not liking the first two episodes of the Office, but randomly catching the excellent Safety Training one on TV one day and deciding to give the show another shot. I ended up watching it all.
Two that come to mind are That 70's Show and It's Always Sunny in Philadelphia. I didn't start That 70's Show until way after it ended but I saw "Vanstock" and decided to buy the entire series. With It's Always Sunny, I saw the episode where they try to make a dating profile for Charlie, which is still hilarious.

My girlfriend had watched a few episodes at a friends house so we sat down to watch Shameless and I was not a fan at all...by 3 episodes in I was hooked...Not since Dexter has a series done that to me

The second episode of Rick and Morty. You can almost see the "make Rick less drunk and the whole thing less raggy" note from the pilot during 'Lawnmower Dog." It also helps that 'Lawnmower Dog" is this instantly quotable, excellently plotted piece of television.

The Prisoner-After hearing about the show for years I discovered the this new channel called SCI FI channel was airing it every Sunday night. My first episode was teh last of the series. So of course it made no sense to me. But it captured my attention enough that I kept watching and eventually saw all 17 or so episodes.
Married with Children-Dumpwater Florida part 1,Caught it about halfway into the episode and was hooked. Watched the show until it went off the air in the late 90s.

The Pam and Jim Wedding Episode of The Office. NBC promoted the hell out of it. I was home when it was on, I loved it so much, I had to go back and watch every episode.

Blackadder - I didn't even know about the first series, and the first episode I saw was the introduction of 'Bob' in the second series.

- Doctor Who - Green death (It was definitely a Pertwee one) * same day Jon Pertwee got me properly into Doctor Who too. I watched as a child in the Sylvester McCoy era, but I didn't revisit the show until the late 90s. By then UK Gold were showing Doctor Who in the middle of the night and I happened to catch the intro to Spearhead From Space while I was channel flicking. I watched it, loved it, kept on watching the subsequent stories in chronological order and classic Doctor Who became my favourite tv show.
