Best omelette you can ever have is usually made at a truck stop, loaded with cheese, grilled onions, ham, bacon, peppers. More than you can handle and inexpensive as well.
Throw in some sausage gravy, biscuits and grits.
That's good eatin' right there.

The steak omelette from IHOP is my favorite. Especially with the salsa on top.

I like to make a Spanish omelette - green and red peppers, onions, thin slices of potato, king prawns and cheese. Can throw in some chicken and pancetta too if you're feeling extra meaty.

Chili, Cheese and Sour Cream.
Actually, I know a place that makes a really good healthy omelette. It's chicken breast with cucumbers, onions and tomatoes baked in a tahini sauce then fried into an egg white omelette. I like to pay extra for the low-fat mozzarella.
