As a long-time cook and Mexican, they just don't go together. You could do it, but it's just not nearly as good a use of bacon as you could do.

I love bacon and egg tacos. Sometimes when I make them myself I cook the egg sunny side up, add a few strips of bacon and put that bad boy in a tortilla with some hot sauce.

I know Taco Bell used to have chalupas that had bacon in them. They were great.

TECHNICALLY it's because Smoked/Meaty/Umami flavors aren't really complimented by hot spice. The two flavors are considered to agrivate one another.

Thousands of Southwesterners who heap salsa on their bacon & egg tacos would disagree with that. I'm not one of those; I do think the two flavors don't mesh well. I prefer mine with just salt and pepper. Bacon & egg tacos are the ambrosia of the gods, by the way. Anyone who has never tried them should really do so.

It's the combo of flavors that compliment rather than aggravate. Creaminess and mild fats of eggs and cheese cut abrasiveness of the salty flavors, you're building a complex creation. There's a reason the combo of several ingredients work well together but meanwhile you don't see people's dunking bacon in Tabasco

Black pepper bacon is the most popular type of non-traditional bacon in these parts. Every place has it. It's not a dash of wussy pepper either, the stuff is fairly hot even by my standards.

Black pepper isn't spicy it fits into its own flavor profile called "peppery" While peppery can also mean spicy when it's used in tasting terms it's generally classified exclusively by black pepper peppercorns. Peppery goes well with umami
