I saw the Jonas Brothers play a free show at the mall, then met them and had them sign the manga volume I bought that day.
I didn't think twice about it until the next year where I happened to see they had opened for a Hannah Montana concert my little cousin went to and said "Oh, I happened to have a picture of me with the opening act" and her mother went "You met the Jonas Brothers?".

Back in the early 90s saw a then unknown Stone Temple Pilots open for Megadeth IIRC. Two days later we saw the first STP video on MTV. In 89 IIRC saw Alice in Chains open for a big package tour. Then a few years later saw them opening for Ozzy. Are you thinking of the Clash of the Titans tour in 1991 - Slayer, Anthrax, Megadeth with Alice in Chains opening? It would have been about a year or so before opening for Ozzy. Also, please know how jealous I am of you haha

Closest I got is seeing Corrosion of Conformity open for Metallica.
They weren't gamechangers, but they did get a moment in the sun sometime after.
I don't like them, but people did.

I saw Limp Bizkit open for Helmet and Korn, they got booed offstage after a few songs.

I saw a Perfect Circle open for Nine Inch Nails right about when Mer Der Noms came out, but Maynard was of course a big star before then.

I missed out on seeing the Dixie Chicks before they became big - they were doing a a gig in Tallahassee. Korn opened for Dokken at a SRO show I attended. Only thing I remember is the drummer dropping trou at the end of the set

Back then I had a habit of drinking a bit too much at shows. So lots of the time I remember the first two acts and that is it. I was just lucky. Where I grew up it was 25 minutes to Mobile AL,1 hour 20 minutes to Pensacola FL,45 to 50 minutes to Biloxi MS,About an hour to Hattisberg MS,1 hour 20 minutes to New Orleans. Between all those cities most tours made a stop. My high school years I was hitting at the very least 2 concerts a month. Almost all the cash I made at my first job went to concert tickets and gas.

I'm in a similar situation now with my location and it's definitely great for catching shows (though perhaps not one's wallet). By the sound of it, a lot of fans who saw shows on that tour would throw things at the band while they played. It's funny because, of all the Seattle bands, Alice is the most metal. I wish I could have gone to an Alice show back then and seen Layne perform live. If those crowds only knew what they were seeing at the time!

Not really an opening act for anyone, but I saw Thursday headline at some local place years back when they were just a smalltime local NJ band. They got pretty big in the screamo/emocore scene a few years later.

Growing up in Atlanta in the 80's and 90's, if you didn't know that person you had a friend or family member who knew a person that made it in the music business on some level or on TV that's from here. It's less than six degrees of separation. And today when you happen to run into that person it's no big deal for the most part.
Too many to list.
But it would have been cool to have seen a Falcons game where Brett Farve at least wore the uniform.

My friends and I saw My Morning Jacket open for Doves in Montreal back in 2002. That was a memorable show, because not only did we fall in love with MMJ, we also got on stage for Doves encore, and I truly understood why people become rock musicians.

There are a ton of metal bands that are huge(for the metal scene) on their first national tours here in the States.
Black Dahlia Murder, Unearth, Amon Amarth, Opeth, Children of Bodom, Arch Enemy. Also a band named Burn The Priest would constantly play this punk house in West Philly before they changed their name to Lamb of God.
