You know, watching various reactions to the two episodes that started Season 7, a thought came to me:
If they were to take Starlight out of the show to do something away from Ponyville, I think I know a good job for her: teacher at Celestia's school.
Her magical prowess is strong enough, and she helped teach Trixie how to do transfiguration (and teleporting, even though that messed up a bit). So with students actually willing to listen, who knows what they could accomplish.
