I would probably have him deal with some bounty hunters, perhaps, as well as dealing with some Tatooine business. Word doesn't get to Vader because Tatooine folks aren't exactly thrilled to invite outside intervention in their business, anyway, but outside of that, you could just have him mindtrick a few folks, with the rest writing him off as an eccentric with an expensive toy in the form of a lightsaber he no doubt snatched off a dead Jedi or won in an auction. Just a Man With No Name kind of tale, with him going off to be a hermit after solving an issue, either for Owen and infant Luke's safety or unrelated to them.
If the dude just seriously stayed all by himself in the desert this whole time and helped no one, he'd be an awfully shitty Jedi in terms of ethics.

The comics have already shown some great examples of Obi Wan keeping Luke and his family safe in various ways, staying under the radar as much as possible. Developing that would work well.

Ever since I read about the disaster surrounding the Han Solo movie, I always wish for an insane movie filled with random dance numbers, using the Force to hit people in the groin, and the main character having an "I fed up with this world!" part.

I want to see something that's a cross between Logan and that comic story where Darth Maul comes back as a half robot spider, thus prompting Uncle Owen to tell Obi Wan to stay away from their family. I don't know if they could though because Darth Maul already came back in Clone Wars which is official canon.
Either way, when you watch the films in order the story of why Uncle Owen doesn't want Obi Wan around is something we are never told as an audience. At the end of Episode 3, Owen and Beru seem to be cool with Obi Wan. Then in Episode 4 they want Luke to stay away from that "crazy old wizard". This film should be the story of why Owen doesn't want him around.

A western-type movie where he helps people on Tatooine. Simple, easy and self-contained, while fitting into the wider universe of him being on the planet covertly looking out for Luke.

I know they probably don't want to get too deep into continuity, but maybe include Satine as a love interest? I always found her kinda boring on Clone Wars, but maybe as a teenager she was more fun and adventurous before getting caught up in the day to day minutia of politics.

To be honest I can't think of any good movies of that type(unless you go full Karate Kid), especially with the kid as the lead character.
