To be very specific, should I build it Christmas Eve, or leave it in the box for her to open Christmas morning?

Adds to the magic when you see it built and ready for play. Perfect and intact.

Box it and then build it with her.

The wife suggested I build it on Eve since I'm going to end up building it anyway.

I always liked opening boxes and putting things together as a kid, even if it often needed parental intervention to complete.
Depends on your kid, probably.
Is Santa still real, and is it a gift from him? You could build it and leave in a note from him or something. Maybe a "sooty" fingerprint, or an elf sized tool, or something

Either way it’ll be a humorous situation where you curse and scream and ruin Christmas before learning the true magic of the day is time with loved ones.
I watch A LOT of TV.

If it has stickers/decals... At the very least you have to put those on. Those are a chore to put on, and without them toys playsets look naked. Then again, its been so long since I've seen a toy playset I have no idea if they even have those anymore.
I remember when my parents got me the Ghostbusters firehouse, and they had it next to the tree with Ecto1 parked next to it. Was ammaaaaazing. Of course they made the mistake of getting a bunch of those little ectoplasm buckets with the cool ghosts hidden in them... Oh the places that ooze went.

Lucky lucky LOL I didn't get a Ghostbusters HQ or a Ecto 1 until 96. Got both from a buddy that had been collecting action figures since the early 80s. Ecto 1 was open and besides the driver's side door was complete. The HQ was complete. Traded him some Star Wars(90s) figures mint on card for all of it. Wasn't there a Egon figure that was just a repainted Super Powers Plastic Man?

Depends on your kid, really. There's also the factor that if you do build it with them or otherwise the next day, you might be feeling beat by then and that could be a real mess. If you do it ahead of time, you don't have to do it after possibly not sleeping great.

Dad here with a little girl.
100% build the night before. Watching her rush to it and ignoring the things that are wrapped is magical.

I say build it the night before. If you check YouTube for a video on how to assemble it, the construction should go faster. In fact, watch a few of the videos first to get familiar with the pieces and how to install them. Just make sure if you do look them up in advance, your daughter doesn't find your search history on the subject.
