Jim Cornette started as a ring photographer. He moved on to a bunch of odd jobs, such as ring announcing, time keeper, magazine and pr work, etc before becoming a manager. Heyman too.

Whatever happened to Ralphus? Heard a rumor he passed away but nothing concrete anywhere. Don't even know what his real name is

Was Bisch an announcer first or "coffee gopher for Verne Gagne"? He approached Verne for the "Ninja Stars" game being promoted on AWA TV and ended up with a "marketing" gig (by that point he was probably just cold calling event promoters and charities looking for sold shows to run) - then Larry Nelson missed work after a bender and the rest is history. -- The muscle bound security guard during the Attitude era started an angle with Steve Blackman, but he didn't really want to be a worker and backed out of the idea.

Sonny Onoo had some sort of role for WCW before managing Wasn't he international talent relations, bringing all the NJPW and AJPW people in?

They were partners on the Ninja Stars toy thing, and after Bischoff got to WCW, he brought in Onoo as an international consultant, to help with the negotiations with NJPW. About a year later, Onoo became an on-screen manager.

Jim Dotson....he was a mate of Takers and he started getting severe headaches when they tried to do something with him and I believe he passed away a few years back

I’ll say Finlay strictly from a WWE standpoint. Post invasion he worked for years as an agent before essentially returning to in ring competition out of nowhere. If you weren’t familiar with any of his pre WWE work you might have thought he was an all new superstar.
