They both feel like big stars in wrestling to me. But Jericho had a longer career and more non-wrestling visibility like Fozzy, so he gets the "edge" over Edge.

Jericho never main-evented Wrestlemania vs Taker Jericho was one of the top stars during the height of the Attitude Era. That counts for a lot more than one 'Mania main event. That, and he was in the main event versus Triple H, even if that was somewhat eclipsed by Triple H's feud with Stephanie, along with it being a foregone conclusion Jericho would be losing the title. Jericho's best main event run was probably when he was basically the top star of Raw, the initial SRS Jericho.

Can we hold Jericho’s longevity over Edge when Edge’s career ended early because of injuries? Sure. It's not like Edge was Magnum TA and got injured right when he was on the cusp of a huge run. He had a nice long career that doesn't measure up to Jericho's. It's like how Austin is a bigger star than Jericho, despite having his career shortened as well. Goldberg's a bigger star than Randy Orton. It's not so much that Jericho's career was simply longer than Edge's, it's that Jericho did much more within it.
