I guess Thanos' motive in this was knowing that Asgard had the Space Gem (aka, the Tesseract) but it would've been all but impossible for him to get to it, so he used Loki as a pawn to get easier access to it. The Tesseract/Space Gem had been on Earth since the Middle Ages. Red Skull discovered it at the start of World War II, then Howard Stark found it at the bottom of the ocean after Cap and Skull fought it out, letting SHIELD possess it for decades. It went to Asgard after Loki's attack on Earth failed, so Thanos' scheme actually made it more difficult for him to get the gem. Thanos' plans of using proxies really don't make too much sense until you piece together that the one character he's afraid of is the All-Father of Asgard. Once Thanos begins going after the gems himself, he acquires them all in about 2 days with relative ease. But he only started this campaign after the events of Ragnarok, where Odin dies. There's a duplicate/fake Gauntlet on Asgard and they clearly know the danger of keeping the stones in one place as shown when Sif and Volstagg give the Reality Gem to The Collector(though strangely, Loki had possession of Space and Mind in Avengers, but wasn't all that powered up). Thor straight-up powers through a blast from the complete Gauntlet and would have killed Thanos with a headshot, and he's only been the All-Father for a matter of days. So, it stands to reason that Thanos was afraid if he started directly acquiring the gems, the more experienced and powerful All-Father Odin would have instantly ended his quest. So he's forced to rely on these convoluted and bumbling plans until Odin suddenly dies, then he's free to act without restraint and gather the gems easily. That's my two cents on all the "Wait, why didn't...?"s in Thanos' plans.

I can see why they'd go this route, morally grey Trickster Loki is both more versatile as a character and more accurate to the mythology, and less dull than 'subjugate humanity' Loki.

The popular fan theory is that as powerful as Thanos is without the Infinity Stones, he's still not a threat to Odin, Hela, or Ego. Once they were all dead, acquiring the Stones was a relatively simple task.

Honestly it fits a lot with the comics' portrayal of him, too. Sometimes he's a villain, sometimes he veers into antihero territory.

Remember when the Avengers were bitching at each other just because the scepter was in the room?
Loki was holding that thing for a while.

I can buy that Thanos had exerted some kind of control over him in Avengers, because he was written decidedly out of character at points, but good guy all along, not so much. A god of trickery, underhanded deeds, and chaos wouldn't come to earth and just be like, "Oh hey, I'm a fascist dictator now, for some reason. Bow to me." The reality was shaky writing, of course, but if we're trying to in-universe explain inconsistency, an altered state of consciousness makes sense. It'd also explain why Loki, of all people, didn't take the power and act on his own agenda, it'd be Ronan to do it.
