This can be super finishers, or ones that were short lived, but I was thinking a bit more finishers we'd see one offs of.
For example, Hogan has the legdrop, and the Axe Bomber, but at Fall Brawl '95, he made the Zodiac tap out to a camel clutch to win the War Games match. I am not terribly sure WHY he did it, maybe just to be a bit different, but it caught me off guard.

He used the final cut and I think an Alley oop type finisher too

Traditional War Games rules required someone to give up the match for their team, so Hogan using a submission made sense.

Hogan used the camel clutch during his early heel years. Also had a bearhug finisher back then too. Ah, neat. I'd seen him do an STF before, so I knew he'd done submissions more in his earlier career, though he hadn't got the finish with it. Makes sense, though, I guess, it'd have been pretty ballsy to try to debut doing a legdrop as a finish from the get go, even back then.

Jericho used a proto skull crushing finale for a while in 2001. The Breakdown. He also had a sleeper slam called the Flashback in 2002 and used the enzuigiri as a finisher in 2004. He'd always go back to the lionsault and Walls though.

Steve Austin would bust out the Million Dollar Dream when he was desperate.
The Rock had thar swinging DDT that was in the games called Laying the Smackdown. Shane McMahon sometimes does it.
Undertaker used the Triangle Choke and Dragon Sleeper.
Kane had that falling powerbomb he used in 2001 only.
The Batista Bite.
Test had millions of finishers. Flying elbow, running big boot, Tesdrive, Pumphandle Power Slam, gut wrench powerbomb.
Lesnar had the Brock Lock for a short period

Lesnar had the Brock Lock for a short period Yeah, I think Brock's bearhug was called the Brock Lock, the one he finished Hogan with, though then they had him doing a stretch muffler and calling it that. Just as well, I really don't want to hear "muffler" in the context of wrestling. I think the only person with more finishers than Test and Big Show would be Jushin Liger (particularly if you count Ligerbomb variations), though I feel like Zack Sabre Jr. is getting there from his submissions he will get one-off wins with.

Triple-H used the sleeper hold as a finisher for a few weeks in the fall of 2002. And the Pedigree Pandemonium which was a Diamond Cutter. The Rock also used a shoulder breaker in 97, I missed in my first post.

For a few weeks in late 03-early 04 Brock used the "Brock Lock" submission move, he first used it on Benoit on the 12/4/03 Smackdown that I can recall.

Shawn Michaels very briefly used the pile driver as his finisher in late 93/early 94. It was after the teardrop suplex and before the superkick.

Early in his ROH World Title run, Samoa Joe got over how big of a threat Homicide was to his title reign by putting him away once with an Avalanche Muscle Buster...literally the Muscle Buster, but done while seated on the top rope. Not surprisingly, the move wasn't busted out much after that.
Over in NJPW Hirooki Goto has used a lot of finishers, and while GTR is now his main one (with a reverse GTR as the set-up and the Ushigoroshi as a signature), I love it when he busts out his old Shouten Kai during big matches, and wish he'd use that as a super finisher, it just looks awesome.
