Because, if you can afford that expensive phone, you can also afford the expensive headphones that go with it. Oh, you can't? Here's a cheap adapter that you will very surely lose and have to buy over and over again.

Because of us are willing to pay $100+ for headphones.
Remember when extra costumes and levels were included in games for free and now they charge us for DLC or season passes? That's why.

Personally, I do my best to avoid products and companies who are blatantly ripping people off. EA for example don't get a penny of my money unless the game is heavily discounted. Apple tend to be rip-off merchants so I don't bother buying Apple products. Likewise phone games that try to force you to pay to play. They can f*** right off. I can afford $10 too buy a gem pack. I'm not going to because the game shouldn't dictate when I can play or not.

Because odds are you either have a good set of headphones that you use, thus immediately throwing the free set in a drawer never to be used or you have a bunch of shitty sets sitting in a drawer that have never been used.
Myself, I use the EarPods that come with the phone because I mostly listen to podcasts so don’t really care about audio quality. And I’ve got like 6 pairs of those from years of buying iPhones. And my little 3.5 to Lightning adaptor stays on the AUX cord of my portable stereo so I never lose it.

So they can sell you premium headphones. The end goal of wireless headphones will be to produce a closed non Bluetooth system so only first party buds will work so they can tack another $50 onto the price for something that is actually worse than the system it replaced, and will have a short lifespan.

I hate that Apple sets the trend (notches and phones without jack) and most brands just follow
Thank god for brands like Xiaomi and Samsung that actually give you options on your phone
Galaxy S10 is coming out and sure, its expensive as f**** but you also get like 400$ worth of extras for free with your phone, and it has expandable storage and headphone jack
