1980s: Andre on Hogan 1990s: HBK on Jannety 2000s: Austin’s heel turn 2010s: Seth turning on the Shield

1980s: Andre on Hogan 1990s: The Giant on WCW to join the NWO 2000s: The Big Show on Steve Austin to join the NWO in WWE 2010s: The Big Show on John Cena to join Johnny Ace and earn that Iron Clad Contract.
*My answer for any of the years in between will also involve The Big Show.

Surprising yes, authentic nope. I never felt the fans got on board with this heel turn.
I'd rather go with Jericho turning on HBK in 2008, that was very memorable and heelish.

When Austin first turned heel he was receiving massive heat and fans hated him especially considering how much more sadistic and brutal he was. It's when he transformed from sadistic to full blown comedic with the "what?" catchphrase is when fans stopped booing him.

I think it was Austin drawing heat from being aligned with Vince. Vince was coming off some really vile shit with the Linda stuff, people HATED Vince. For that and just being "Mr. McMahon" in general. I could also see people booing just because they thought it was ridiculously stupid, like...how could Stone Cold team up with the man who made his life a living hell and wanted to destroy him professionally and personally? He didn't need Vince to beat Rock or anybody else, he'd done it many times before.

Personally I’d say Savage’s turn on Hogan was the biggest of the 80’s. Because he had already portrayed a magnificent heel in the WWF, I feel like it was way less shocking than when longtime WWF babyface Andre sold out to Bobby Heenan.
