I now live somewhere with an oven for the first time in 10 years, and it turns out I can't do a decent roast potato to save my life. Any tips?

Par boil your taters for 3-5 minutes (depending on the size) until the outer layer is soft and fluffy.
Dust with a couple of tablespoons of flour, which will help get them nice and crispy.
Toss them in spitting hot duck or goose fat (accept no substitutes) and roast in a single layer (don't crowd them) at 200° for about 45 minutes, turning every 15 minutes.

Boiling the potatoes a bit before roasting them makes them fluffy inside. For seasoning, I always kept it really simple: olive oil, salt, pepper and rosemary.

Boil it for a few minute so you get that fluffy texture inside.
A pinch of salt,perfect.
Then place in a metal sheet,cover it in olive oil,it will give you that crispy texture outside and make sure it roasts nicely giving it that golden color.
Place a few fresh herbs so you get a nice fragance from it.
Place it on the oven to roast and you will have a beautifuly roasted potato. Delicious.

Duck/Goose fat, and a roasting dish. Low heat for a long ass time.
