Gee I wonder why I'm thinking about this subject.
Basically I'm kind of thinking about trying to give the series a whirl, but fighting games are kind of up and down for me - love some, not as into some others - so sort of wanting to ease my toes in rather than just dropping the money blindly. From various sources finding numerous games roundabout the same price and kind of trying to decide which to start with, mostly considering between SNK Heroines, King of Fighters XIV, and King of Fighters 2002 Unlimited Match. Each, provided you're shopping from the right place, is in the $15-$25 ballpark so none of them would be that big a gamble.
Kind of thought about instead just grabbing one of the $8 old ones on the Switch, but not really too tempted to. If I were to do that I'd maybe be inclined to give Samurai Shodown a look more than anything. I dunno, thoughts?

Fatal Fury Special and Art of Fighting 2 are good starters for the SNK experience, in my opinion. Samurai Shodown is also fun, but it's a more slower pace, and it's more countering then button mashing.
Hope that helps!

King of Fighters 98 Ultimate Match or KOF 2002 Unlimited Match are really good starting points for the 2D games. I also had a ton of fun with KOF XI and XIII. Garou: Mark of the Wolves is also the gold standard of SNK outside of the KOF series, IMO.
KOF14 is also really good, though it's 2.5D so it's slightly different from the pure 2D SNK games.

Trying out Fatal Fury Special at the moment and I'm pretty into it, seems more accessible than Street Fighter.
For the record while I knew about the voice clips I certainly didn't know about some of Terry's.... other lines. I'm gonna be pissed if he doesn't have a pink skin in Smash Bros.
