My ex-girlfriend and I did a 30-day vegetarian challenge last year and I absolutely loved it. Never felt better in my life and I wound up extending it past the month.
Then we broke up and, seeing as she did 99% of the cooking, my diet has taken a hit. I'm a pretty healthy eater, but extremely limited in the kitchen.
I rarely eat meat, and often order veggie burgers or veg options when I'm out, but a chicken salad is one of the few things I know how to make, and I usually do a TV dinner once a week. I wish I had more confidence and ability in the kitchen because I would love to go full-time vegetarian.

My journey to being a pescetarian started a couple years ago with cutting red meat from my diet because it was making me bloated and tired. Then about a year ago, I watched a documentary about how chicken's are treated before being slaughter and that just put me off poultry. I still eat fish and dairy and I'm honestly the healthiest I've been in my life. I'm not tired all the time and I don't feel like I've had to sacrifice anything for it. I get most of the nutrients I need from my diet but I take the B12 from a bottle.
I work irregular hours and at first, I thought it'd be hard to make pescetarian meals quickly but boy was I wrong. I've become obsessed with spicy tofu curry and honestly nothing tastes better than mash potatoes and oven baked fish. I always recommend starting by cutting back a little by little and if you get a craving, it's not the end of the world. There's so many tasty vegetarian options out there and you can get veggie ready to eat meals too for a quick bite so being vegetarian has never been easier.

Been a vegetarian about six months now.
Only thing I misss is tacos, and once I find some good fake vegetarian beef all will be right in my world.
No way could I go full vegan though. I love cheese too much.

I'm a vegetarian for moral reasons. I'm a vegan because of my extreme lactose intolerance. Honestly? I don't miss it. Cooking vegan is hell of a lot more interesting than cooking meat ever was for me. Cheaper, too.
Now if I could only convince my parents that veganism isn't a Millenial fad...
