I sub to a lot of channels, usually independent creators as a small way to support them if I realize I've been watching more than a couple of their videos. It's not much, but I figure it's something.
Out of all the ones I'm subbed to, I'll list the ones that I go "ooh!" when I see new content posted/ones where I wind up binge watching a lot of their stuff just because.
True Crime
That Chapter and Kendall Rae - That Chapter usually uploads videos that are around 30 mins each, twice a week. The subjects are a good mix of stuff you may know and other cases not as talked about. Mike, the host, is a good narrator who puts just enough of himself in his words where he doesn't feel boring, but also doesn't detract from the stories. Kendall Rae is similar in that she's herself but never takes the focus off the subject. Her videos are longer and not uploaded as often as That Chapter, but still posts regularly. She's also really empathetic and supportive of victims and their families, which I really appreciate.
Body Language Analysis
Observe and The Behavior Panel - Observe is one person, a guy named Logan, who'll watch videos on a number of different things, like true crime, reality tv scenes, YouTuber drama & apology videos, and read their body language to try and tell if they're guilty, sincere, etc. I like that he's a mix of subject matter, because it's not always heavy. The Behavior Panel is a group of four men (Greg, Scott, Chase and Mark) who specifically work in the area of body language, interrogation, etc. and do pretty much the same thing as Logan; e.g.: watching videos, reading their facial expressions, posture, even their choice of words, to attempt to read a situation. They do more crime related stuff usually, but stuff like a missing child press conference where parents speak or police interrogation. I've learned a good amount about things like micro-expressions just by listening to them. Their videos are usually pretty long; an hour a piece, at least. All the hosts of both shows have engaging personalities, which is important.
Horror movies
Dead Meat - I'm pretty sure most people who like horror movies enough watch this channel haha.
Funny Internet Stuff
Whang! and Charlotte Dobre - a lot of people here watch Whang!, so he's probably not someone who needs much explaining. He talks about some of the most insane, hilarious shit on the internet. Charlotte Dobre is a more recent discovery of mine, maybe within the last few months. She's one of those people where you watch them and think "I'd definitely be great friends with this person" for me. She's funny and silly, talking about stuff like amusing Tinder profiles, entitled bridezillas, humorous social media posts, and so on. She's a really easy watch, imo, and really easy to fall down a rabbit hole with, as her videos average about 10-15 minutes; the perfect length to keep saying "okay, one more", something I've done on more than one occasion.
There are more channels I'll watch regularly, but they're a little more niche (creators who play a certain video game, for example) so I won't bother listing them here. I can't imagine y'all care *that* much about what I watch on the YouTubes.

Seeing how this has been bumped, I decided to relist mine, since I've recently unfollowed a number of channels and am following some new ones. Currently, my list is:
Channel Awesome (look, I know they're problematic, but I enjoy a lot of the stuff they put out. Between various Nostalgia Critic installments, Fanscription, Dark Toons and other series, they're still one of my favorite channels)
Parts FunKnown (mainly just for How Adam Would Book these days, but sometimes, I'll check out QuizzleMania or a top ten)
Wrestling With Wregret (Brian's videos are insightful and I find his takes to be intelligent and unbiased, unless otherwise stated by him. And who doesn't enjoy watching classic PPV reviews?)
Poparena (It started for me with Animorphs, but I really enjoy Nick Knacks, as well)
Peridiam (His Survivor videos range from discussing strategy to analyzing elements of the game, to even top tens. He also covers Big Brother and most of what I know about that show comes from his videos)
Idoled Out (Another Survivor Channel, both similar to Peridiam, but at the same time, he goes in different directions with his videos - top five merge feasts? top five best birthday celebrations? - that makes both channels worth following.)
Council of Geeks (I mainly watch for her Doctor Who videos, but for those unaware, she is a member of the LGBT Community on Youtube and has put out several videos about living as transgender and the treatment of trans people in entertainment, that are quite informative)
Pushing Up Roses (I love her reviews of Murder She Wrote. Plus, she's done some essay videos, including one a couple of days ago about her struggles with Body Dysmorphic Disorder)
Defunctland (Theme parks aren't really my thing, but he also covers old TV shows from my youth, like Dumbo's Circus, Welcome To Pooh Corner and Carmen Sandiego.)
MistareFusion (He's been around for a long time, but I had only really watched for his video series about Super Sentai and Power Rangers. Well, he recently started a new version of that series, comparing Power Rangers episodes with their Sentai counterpart and seeing which show did a better job. He's up to the Green Ranger saga now and it's been fun to see how each show uses the footage differently. Obviously, it originated from the sentai, but that doesn't always mean that Zyuranger did a better job than MMPR...)
Julie Nolke (a Canadian YouTuber who gained fame for her "Explaining The Pandemic To My Past Self" series over the last year. She does new videos almost every Thursday. Sometimes, the videos are less funny and more on the artsy side, but she's worth a watch)
I also follow Watchmojo and Ms. Mojo, as well as TNT (for AEW Unrestricted) and BTE, along with some other channels I have no desire to mention lol

Also, still on the subject of researching dark stories, I'm hooked on Wendigoon and Fascinating Horror now. Not sure if I mentioned Baseball Doesn't Exist, that's another good one that goes into detailed baseball controversies in a dry but entertaining way without coming off meanspirited or trying too hard to be wacky.

Yes! I've been going nuts on his stuff lately. Had no clue he had a history channel, can't wait to get into that one. I also love his toptenznet stuff as well. My little cousin got me into Minecraft while I was sidelined with a broken foot and I've been watch a bunch stuff on that as well. Love the mod and manhunt stuff. Wisp, xNestorio, and some of the DreamSMP crew (though mainly with her as she loves them). Most usually gives a me a good laugh.

Monsoon Classic - Does 'WWE Network' infinitely better than the WWE/Peacock did/does.
The Needle Drop - Pretentious as hell, but I enjoy his reviews.
OneyPlays - I'm usually not a fan of LP channels, but this one is funny as hell (depending on who the co-hosts are).
SNES Drunk - Great, informative, no-nonsense reviews. I appreciate that he doesn't try to have a schtick or ape AVGN.
KanaChanTV - Praise be to Asuka.
Caddicarus - I just find his stuff to be a lot of fun.
Cannot Be Tamed - Much like SNES Drunk, she provides great game reviews without the hokey bullshit.
That Chapter - Probably my favorite YouTube channel. He's funny and extremely thorough. Can't recommend this one enough.

Sorry for resurrecting this thread, but here's a few I've got preferences for: - Cinemassacre-Been a fan of his since 2008.
- FlemLoRaps-Showcases some good stories on his channel, and he's a Bengals fan.
- UrinatingTree-Always gave me a laugh with his videos.
- Todd In The Shadows-Even dating back to the days when TGWTG was around, he is definitely my favorite person to watch on that site, especially TrainWreckords.
- Hello From Hawaii-As a resident of Hawaii (and a indigenous Hawaiian), seeing life about the islands from a local viewpoint is pretty good.
- Various Virtual YouTubers-Helped me feel happy throughout the pandemic, with Gura & Korone being my top 2 faves
- Noralities-Probably the only "Modern AniTuber" who I like alot.
- Markyd123-Ever since I started watching his channel, I've been hooked, with either Ring Of The Hawk or his looks at the early days of NWA-TNA
- Wrestling With Wregret-Probably the first wrestling channel I watched, though I need to start catching up on his stuff more.
- Rap Critic-Another Ex-TGWTG member who I still like to watch.
- Matt McMuscles-Wha Happun? is one series I can't get enough of.
- Maximillian Dood-Probably my fave YT channel talking about Fighting Games.
There's a lot more I like, but those are the ones on my mind just now.

Thorgi’s Arcade is another fun channel if you’re interested in any fighting game related. He’s not frame-data obsessed like Daigo either (who does have good videos too, FGC Translated is funny), but Thorgi offers a more casual friendly perspective. His KOF series is fascinating.

I guess I'll update my entry as well.
I previously mentioned Grey Still Plays, but I had completely forgotten that channel ever existed. I do, however, enjoy watching Real Civil Engineer and Kibitz play various games like GSP does, but with a more whimsical style. I find it relaxing.
I still catch the weekly BigStackD video, though it is not quite as interesting as before.
I catch How Ridiculous when they release stuff. It's so weird now to think that they originally were trick shot artists like Dude Perfect (who I don't think I have watched in at least a year now), but now they're the random and stupid destruction people. The amount of messes that they've been responsible for at the Gravity Discovery Centre is quite extensive.
Oh, and every night my wife and I will watch Good Mythical Morning together.

I no longer follow Council of Geeks, a choice I made late last year. A lot of their videos veered away from the stuff I followed them for and I simply lost interest. I now follow a guy named Lou Gregory, who posts ECW matches and promos. I also follow a spinoff channel of Parts FunKnown, No Rolls Barred. It's a board game channel featuring members of the WrestleTalk team, in particular Adam Blampied and Laurie Blake, as well as a very fun cast of comedians and online personalities. I never thought I'd enjoy watching people play board games, but this channel really changed my mind.
