Made a delicious pot of chili earlier. Onion, red bell pepper, poblano, jalapeno, serrano. Used a chili seasoning packet cause I haven't been experimental enough to try regular seasonings yet.
What do y'all put in your chili?

I was in the mood for some homemade chili a couple weeks ago so I made some for the first time in forever. Used pace salsa as the base for it, no tomato paste or sauce, just the pace. It was a southwestern chili, so it had peppers in it too. Turned out super good.

BlackoutCreature's Slow Cooker Chili Recipe
1 lbs. Stew Meat, cut into ~1 inch chunks (beef works best, but pork or game meat also work well) 1/2 C. Chopped Onions 1/2 C. Chopped Bell Peppers (I like a nice mix of green, red, yellow and, yes, even orange, but any kind will do) 2.25 oz. Can Sliced Black Olives, drained 4 oz. Can Sliced Mushrooms, drained (low sodium if you can find them) ~16 oz. Jar Chunky Red Salsa (low sodium if you can find it)(a can of Diced Tomatoes, undrained, will work as well, although you might want to add some cilantro or other herbs as well) 6 oz. Can Tomato Paste ~16 oz. Can Red Kidney or Black Beans, drained (once again, low sodium if you can find it) 2 tbl. Chili Powder 1 tsp. Cumin 1 tsp. Unsweetened Cocoa Powder 2 cloves Garlic, finely chopped (or to taste) 1/2 tsp. Salt (or to taste) 1/2 tsp. Black Pepper For added heat, add a chopped jalapeno pepper or some cayenne pepper or hot sauce of your choice.
Mix all ingredients in a Slow Cooker and cook, on low, 6-8 hours. Serve with cheese, sour cream and pita bread.

I love chili season.
The trick is to undercook the onions. Everybody is going to get to know each other in the pot.

Partially cooked, diced bacon. Ground beef, bison, or chicken. Diced red or green bell pepper. Diced tomatoes. Garlic powder, onion powder, salt, black pepper, red pepper flakes, chili powder, smoked paprika. Beer. Optional: black or red kidney beans.

So I've been playing around and tweaking my recipe, watching different videos and looking at different recipes to find ideas. I've come up with this:
1 tbsp chili powder 1 tsp cumin 1/2 tsp paprika 1/2 tsp smoked paprika 1/4 tsp cayenne 1/2 tsp garlic 1/2 tsp onion 1/2 tsp cocoa powder 1/4 tsp red pepper flakes 1/4 tsp cinnamon 1 lb chuck roast cut into small pieces 1 red pepper, diced 1 poblano, diced 1 jalapeno, diced 1 serrano, diced 1/2 large onion, diced 1 can tomato sauce 1 cup beef stock
It's on the stove right now and smells amazing and tastes delicious!

I don't use a measured recipe since a lot of the ingredients vary, but I do have an ingredient list for a normal batch:
About a 1 quart bag of frozen tomatoes from my garden. (it works better than you think) about 1lb of ground pork or beef 1 can chili beans onion garlic green pepper chili powder oregano small bit of cumin little bit of brown sugar or molasses, depends on the sweetness of the tomatoes salt black pepper
If it's too thick (like an unstirable paste), add some beef stock. If it's too watery, add tomato paste
optional ingredients I'll cook in depending on the mood: corn, sliced olives, tapatio sauce, bit of cinnamon, lime juice optional ingredients I'll add AFTER cooking depending on the mood: sour cream, green onions, cheese (about any kind), tortilla chips, saltine crackers (my fav)

About a 1 quart bag of frozen tomatoes from my garden. (it works better than you think) How do you grow frozen tomatoes? When I get 700 tomatoes and I only eat 2-3 a day, I freeze a bunch of them? Literally just put them in a freezer bag and toss it in the freezer.
