The Final Fantasy 7 Remake was disappointing with its final boss fight, in that the game had like five of them in a row. I guess the boss fight wasn't great, but the story had so many "THIS IS AWESOME" moments I instantly wanted to buy part 2.

I must say Skyrim too, because Alduin didn’t feel like a final boss at all. The vampire in the Dawnguard DLC was much more satisfying. Was it because he was fought just like any other dragon? Still, I enjoyed fighting Alduin. Now, Oblivion, that was a shit final boss, since you actually don't fight Mehrunes Dagon at all!

I feel the opposite, I loved the boss fights and didn’t like most of the “extra” story beats they added. I don’t like the direction they seem to be going towards at the end (won’t spoil that here) but if the gameplay is as fun in the next one, I’m definitely buying it.

After you get Sid in Final Fantasy Tactics. One of the things I like most about FFT is the different ways you can break the game over its knee even without using Orlandeau or giving his Excalibur to a busted Ramza build. Though there's a lot more involved in breaking the game with these methods versus the game just giving you Orlandeau and Excalibur on a silver platter in Chapter 4. Not using either and trying to play the game straight is its own hard mode lol.
As for Final Fantasies and weak endgames/endings, I think XIV and its various expansions have really good endgame/final boss segments. The fights with Ultima Weapon, Knights of the Round, Shinryu, and Hades felt very epic and deserving of final boss fights. Though XIV's 8-person trials/raids and 24-persons raids have always done a great job with senses of scale and challenge.

Lol, all I remember about the final boss in Oblivion is I wAs playing on a PS3 and there was so much going on that my game was lagging down to something like 0.1 FPS

Pretty much all Bowser fights are pretty damn lame.
With one exception.

Since the game's so long and still recent I'll put it in spoilers, but Persona 5 Royal - {Spoiler}{Spoiler}I love the endgame of it as a whole, but the actual final battle with Maruki when the lyrics kick in is super underwhelming. First Adam Cadmon fight is a pushover compared to the fight that came before it then the second you have a ton of buildup only for it to be literally impossible to lose.

One of the Halo games (I think 4) has a terrible final boss it's like two button presses and he is dead.

Calamity Ganon. The build to get to the fight is great but it's kind of a lame pair of fights, even with his damage halved by freeing the champions

I have recently been playing Wind Waker and Twilight Princess. While TP Ganon took some time to beat thanks to him blocking attacks and having a lot of energy, I'm not sure if I at any point during the fight was down with more than three hearts. WW Ganon on the other hand did a lot more damage.

The final two sequences in CONTROL were big time letdowns. Especially following the awesome and epic Ahti’s Headphones sequence that came before them.

Not so much 'disappointing' as frustrating, but the final boss in Gucamelee.

Yeah, I get Fallout really isnt designed to have epic boss fights but you can literally punch Autumn a couple times and it's endgame.
