Ballpark estimates for those games on earlier consoles that didn't keep track of play times.
On my Switch, Binding of Isaac has over 805 hours on it, more time than all my other games put together. And I can imagine that time going up significantly once the Repentance DLC comes to the Switch version. Honorable mentions go to Fire Emblem Warriors with over 300 hours, Hades and Smash Ultimate with over 100, and Slay the Spire just under 100.
For older systems, I can almost guarantee that I put more than 1000 hours into both Super Mario RPG and Earthbound when I was younger. I played those games for years, couldn't even tell you how many times I beat them. Tales of the Abyss for PS2 was another one that took up way too much of my life for a while.

My one and only playthrough of Skyrim is currently clocked at 605 hours, and I haven't even completed all the quests yet.
Beyond that, I've sunk several hundred hours into each of the Mass Effect trilogy, and a similar number into the Ezio Trilogy Assassin Creed games.
Honourable mentions to Red Dead Redemption 1 and 2, GTA: San Andreas, and Championship Manager 2003-04.

Civilization 2-4, especially 4 since I no longer have 2-3 since they were in much older laptops. There was a period where I'd sink at least 3-4 hours a day on Civ 4. Alpha Centauri to a lesser extent, maybe less than 3.
FTL/Faster than Light is another game. A successful run I can do in like 2-3 hours. Game has like close to 30 ships to use. Beat them all on normal mode, then hard mode. Then several more runs so I get the highest score possible on each of them. And of course, there's a myriad of failed runs.
Another one is a roguelike called Cataclysm Dark Days Ahead. That one is a time sink. Zombie apocalypse open-world sandbox and a roguelike. So much to do. A game that is constantly updated, and there's also mods for it.
Similarly, Dwarf Fortress, another time sink.

Chrono Trigger and Final Fantasy VII are games I've spent several hundred hours each playing and completely beating MANY times over...

Final Fantasy VII just because it's my favourite game and I do a playthrough every couple of years. If I had to guess I'm in the 1000-1500 hour range.
Skyrim and Fallout 3 have also been huge timesinks.

I know I’d put a f***load of time into the Crash Team Racing remake when they were regularly putting out new content. Couldn’t give you an estimate, though.

Back in the day, GTA San Andreas, Gran Turismo 1 & 2, Final Fantasy VII, and Smackdown Shut Your Mouth.
Nowadays, it's mainly Franchise Hockey Manager and Crusader Kings 2.

I have like 300 hours logged on Hyrule Warriors 1 for Switch & that's not even counting the time spent on the Wii U & 3DS versions. I never even played Warriors games before this, what happened?

Final Fantasy Tactics is the only game I ever spent 25 straight hours playing. I thought that was obscene but some of ya’ll MMORPG players put me to shame.

Pokemon Red/Blue I must have completed 9 or 10 times
Football Manager/Champ Managaer -- I often sink a fair few seasons, most I did was 10 with one of the Championship Managers
Persona 5 I clocked in at over 100 hours, and still ended up wishing it could have gone on for longer---the only time I felt fed up with it was the palace with the rat puzzle. It's possibly my all time favorite game.
FF7 I completed twice, and partially finished a 3rd time, and it's around 50-60 hours each go.
Elder Scrolls Online I played a lot too, completed most of the areas and a few of the DLC ones. I stopped playing it because another game came out and never picked it back up, but I have a few DLC packs still to complete that I may get round to at some point.

unquestionably No Mercy
a friend of mine lived on campus in college and we'd just spend a lot of time in between classes playing that
that doesn't even take into consideration all the time I put in getting all the paths too 100%, making CAW wrestlers and unlocking hidden characters

Each GTA has taken me several years, as I am trying to beat each of them going alpha to omega. I got Manhunt in college, and am still trying to accomplish that feat.

The moment I realized I had spent the literal equivalent of three entire weeks (504 hrs) playing Halo 4, I sat the game down and never went back.
