The key trick to smoking a brisket, pork shoulder, chicken, turkey, lamb, human or ribs is to put some sausage links in the corner of the smoker and snack on the toasty, delicious and juicy treats while you cook the main dish. Boneless pork loin is a go-to at my house. It's very difficult to f*** it up to the point of inedibility, and it's deliciously simple to do. Doesn't take all that long, either. Was coming to update. That is exactly what I ended up cooking. Was freaking great. However between this and the grill I don’t know if my wife is ever going to do the cooking again lol See, that’s the downfall of the grill and/or smoker. Any significant other you happen to be with assumes you are in control of the meat (or meat substitute depending on ones liking) for the entire grilling season based one one well prepared meal while you smiled and drank a beer.

However between this and the grill I don’t know if my wife is ever going to do the cooking again lol I'mma do you a solid and let you know you can use your smoker to braise meat while you smoke it, too. Get one of those disposable (recyclable) foil roasting pans to do it in, and you won't regret it. I highly, highly recommend braising/smoking some taco-seasoned chuck roast. I say "taco-seasoned" because you'll be pulling it for tacos. For the liquid, why not a nice beer? And for the taco seasoning, look up some spice blends that work well in a smoky, slow-cooking environment. If you use a couple packets of the store-bought taco seasoning it's going to end up salty and the spices probably won't carry through.
