Two that come to mind.
Kevin Hart’s Mountain Dew commercial with Mean Gene Okerlund. True you could say it was just a generic wrestling reference or that Gene is even more associated with the WWF/WWE. But the style of the shot looks much more like something from WCW than a WWF thing. Particularly like Gene’s locker room interviews in the mid to late 1990s WCW.
Another one is in one of Hannibal Buress’ standup specials. He talks about how he never knew who Jimi Hendrix was until Hulk Hogan started using Voodoo Child as his entrance music.

There was a sitcom called Still Standing(I don't remember if it was any good, probably not because no one seems to remember it) but I do remember the main character Bill saying something about watching WCW "Slugfest" even though this show came out in like 2003 or 2004.
Maybe it takes place in an alternate universe where Vince failed to beat WCW and they decided to freshen things up and introduce Slugfest along with Sin and Greed.

Maybe it takes place in an alternate universe where Vince failed to beat WCW and they decided to freshen things up and introduce Slugfest along with Sin and Greed. I enjoyed that show. Not great but inoffensive.

Malcolm in the Middle ran until 2006. Did their opening credits still use that clip of Bret Hart putting Chris Benoit in the Sharpshooter in the opening credits after WCW went out of business?

In 2001/2002 well after WCW had closed, the rapper Chino XL had a line where he said "Turned on wrestling, saw Goldberg and he said 'Chino, that's a big *****.'"
Hardware chain Ace Hardware stores used the Buff Bagwell WCW Masterlock cardboard displays well into late-2002/early 2003.
On Jay Leno's 'Tonight Show' throughout the 2000s, whenever someone wrestling related would come on, Leno would find a way to play the clip of him wrestling Conan.

Okay, these were in 2001, but I have a strong theory about these two examples.
Both of these films came out in August 2001. WCW had ended in late-March 2001. If WCW had lived, I could imagine announcers mentioning Stacy Keibler and Midajah being in Bubble Boy. As for the Rat Race deleted scene, I had read a comment about how it didn't make the cut because test audiences failed to react to DDP's appearance. Both films were likely filmed in 2000, early-2001 at the latest. So if DDP's scene appeared in Rat Race, it would feel slightly dated because WCW had gone out of business at that point. It sure wouldn't feel like Invasion-era DDP, that's for sure.

Ultimate Muscle having "Kevin Mask", who was part of an nWo parody, arguably counts.
I mainly say "arguably" depending on if you consider the "dMp" to be a parody of NJPW's nWo faction, or if it might hurt its eligibility that I am unsure on if the nWo references were in the manga prior to WCW's demise, but really, WCW pop cultural references past its death are preciously few. I think it ought to count.
