Scrubs had a few I'd consider "gimmick" episodes.
My Life in Four Cameras, My Butterfly, My Way Home, My Musical.
With the exception of My Princess (which was part of a mixed season 7 climbing up from the depths of season 6) I'd say Scrubs was pretty strong with its novelty episodes. Even the His/Her/Their story episodes that shifted the narration to characters besides JD typically worked pretty well. Yeah I think the episodes I named are up there with some of the best in the entire run of the show.

ABC did a lot of gimmick episodes for their programming blocks. I remember they had one night where all the shows had a Vegas plot and some of the characters even interacted. I think it was Grace Under Fire, The Drew Carey Show, Coach and Ellen?
They also had one night on TGIF where Salem got a hold of this time machine and sent all the shows to different time periods.
Individual shows that did gimmick episodes:
Family Matters - I'd count any episode where Urkel revealed a new cousin or alter-ego counts. The two episodes with the evil dummy. The pirate episode.
Boy Meets World - had a horror movie themed dream episode. The Casablanca episode.
Drew Carey Show - Drew Live, Spot The Mistakes
The Cosby Show - had two episodes that used a dream plot, as well as one that was a story Rudy wrote.
Most ABC shows in the early 90s did an episode where they went to Disney World (Family Matters, Boy Meets World, Full House, Roseanne, Step By Step)

The Seinfeld cast on Curb Your Enthusiasm. The Mary Tyler Moore Show female regulars on Hot in Cleveland. More recently, American Housewife, which starred Deidrich Bader, had an episode with Ryan Stiles, Kathy Kinney and Drew Carey making guest appearance. Humorously, Drew and Kathy's characters ended up falling in love with each other.

It wasn't a sitcom, but E.R. did a live episode. They performed it twice, once for the East Coast and three hours later for the West Coast, and if I remember right, they actually had different dialogue for some scenes where a character was watching a baseball game and got asked the score.

Family Guy does a lot of them. Last night they did a film noir parody. They also did one “Inside Family Guy” that was a behind the scenes look at a typical week “on the set” hosted by James Woods.

I really liked Scrubs' gimmick episodes. IIRC, My Life in Four Cameras won an Emmy, too. It was a fun change from Scrubs' usual single camera style while also being a clever deconstruction of multi-camera sitcoms.
My Musical also gave us the incredible "Guy Love" song. I still love that it became JD's ringtone for his phone even though the song only existed in the mind of a brain aneurysm patient.

I honestly don't remember if there was a specific crossover gimmick night, but they did that with Urkel a few times. One episode of Family Matters ended with him getting launched through the Winslows' roof and landing in the Lamberts' backyard at the beginning of an episode of Step By Step. Also, Candace Cameron appeared on Boy Meets World, but after Full House had been cancelled. Melissa Joan Hart appeared as Sabrina in the tag of the same episode, which had a plot involving witches.

Would Deep Space Nine's Trials And Tribbilations count? Had the bit of it being a huge love letter for the original series and them being cut into the footage of the old episode thanks to new technology as well.

Step By Step character Dana crossovered into Boy Meets World Disney World episode. Cory thought Dana might have been Topanga. Roseanne's Disney World episode was mandated since Disney had just purchased ABC and they wwanted to advertise their park, but the very next episode of Roseanne was a parody of Disney World where one of the characters is brainwashed to work as a costumed character in a heartless amusement park.

Voyager had a similar episode which cut into The Undiscovered Country and brought back George Takei for a couple of new scenes.

Would clip shows count towards this? Two of the one I remember enjoying were the Simpsons had Homer in a coma after Bart pulled an April Fools joke on him and Clerks cartoon where Dante and Randall were locked in a freezer and were having flashbacks, but the joke was they kept flashing back to the previous weeks episode.
