Becoming more finely acquainted with the world of cheese is something I would love to accomplish as I get older.
That said … I’m nowhere near that little mini goal, and I’m gonna go with the ultra basic Cheddar. The sharper the better.
Bonus shout out to whatever cheese is in a good queso.

Limburger was and is my go-to cheese on bread rolls. However, I second Gruyère for something like Quiche.

My favorite cheese is wrapping Brie in puff pastry, baking it and serving it with crackers and pepper jam.
Or perhaps the fresh local dairy cheese curds dipped in beer batter and deep fried.
Or just the fresh squeaky curds shoved into my face.
Or is it that cheapass swiss almond or port wine cheese spread that I put on wheat thins or the big honey wheat pretzels.
Or maybe it's the WHIZ that's slathered all over my philly steak sandwich
Or maybe the 28oz of mozzarella cheese that my local pizza parlor puts on it's large pizza

I love Monterey Jack sliced for sandwiches or shredded and melted into foods.
But I have to vote for Red Leicester because it is so delicious to just cut off a hunk and nibble on.
