Miro & Kip vs the Best Friends Arcade Anarchy and Christian vs Kenny 1 would be strong contenders. So would any of the Deeb/Shida matches.
Honestly you could make a ten disc set and still leave out some really notable matches.

Deeb/Shida was already mentioned and a given, but Ruby vs Statlander and Ruby vs Hirsch are recently but really standout women's matches If they were just doing a women's disc, I'd also include Ruby vs The Bunny, which was so much better than people thought, and it beat Roman Reigns and Brock Lesnar in demo so... you should  Cody/Velvet vs Shaq/Jade should also unironically be included, that ruled. Dark Horse answer since it was right at the start of 2021: Quite a few women's tourney matches, particularly the ones that showcased VENY |
