What are some examples outside of wrestling of performers "keeping kayfabe"? For example, when George Reeves made his guest appearance as Superman on I Love Lucy, he was simply credited as Superman, not George Reeves, so as not to ruin the illusion for younger kids who may have been tuning in.

The Muppets have to be the biggest example, with them being treated as actual living creatures rather than puppets controlled by puppeteers.

Jim Varney, aka. "Ernest P. Worrell", smoked. A lot. He was a chain smoker. But he was never photographed smoking, because he didn't want young fans of Ernest to see him and take up smoking.

Yoko Taro, among other creators, virtually never do appearances without a mask on.
For quite a while, Mana of Malice Mizer would not speak in interviews and either hold up signs or whisper their answers to a bandmate.
ALF's creator turned down a Muppets collaboration on the basis that they did not like presenting ALF as a puppet and similarly were very selective with appearances he could make without it breaking the illusion.

Virtual Youtubers. Streamers use a 2d/3d avatar to stream instead of showing their face, for most part it's for the sake of privacy. In general it's frowned upon for the audience to go to a stream and mention the VTubers' stream and refer to any IRL persona that they have, much like going to a wrestling show and declaring to the people around you that wrestling is fake.

Trailer Park Boys very rarely did interviews out of character.
Kenny vs Spenny, they both insist the show was 100% real. Now, I can't confirm anything, but it's kind of obvious a lot of the show was written/staged.

Andy Kaufman had a lot of kayfabe like stuff with Tony Clifton probably being the best example. And he turned it around on itself. Everyone knew he was Clifton but he refused to acknowledge it. Then he had other people be Clifton while the audience thought it was still him. Kaufman was made for wrestling.

In recent years, he would do some interviews as plain old Daniel Whitney, but still be in the "Larry" costume. Gilbert Gottfried is another. His trademark voice is just that, a character voice. When not in public he sounds like a completely different person. Even doing serious interviews, he uses a subdued version of the character voice. But rarely does he ever use his real voice in public.
