Which finishes seemed to suit someone well, but they never used it?
One I am surprised was never used: Andre the Giant using the Iron Claw. It writes itself. Plus in Andre's later years, it wouldn't require much effort/athleticism and still probably look good.

Hulk Hogan wrestled a big man/power style.
His finisher should have been a power slam, or a power bomb, or a scoop slam... just anything besides a leg drop, really.

Bayley, Naomi or Toni Storm using the High Knee as a finisher

I always wanted Chris Masters to use either the Full Nelson Slam if someone was slipping out of the Master Lock, or the Perfect Plex as another grip power based move.

Can I pick a still active wrestler? If so, Wendy Choo, sleeper.

Nikki Bella should've used her forearm smash as her finisher.

I think that's what they were going for when they made most of his offense choke-centric from 1988 on. (plus doing that made it easier for Andre to lean on his opponent for support)

Considering he called his arms the 24” Pythons, I’m surprised he didn’t just use a bear hug or a sleeper hold; something that involved squeezing his opponents into unconsciousness.

Hogan could've easily just ended matches by Hulking up and hitting the Big Boot without the Leg Drop.

Braun Strowman really should've used a chokeslam or a powerbomb or something.
That running powerslam looked weak.

Nikki Bella should've used her forearm smash as her finisher. Yeah, and doing so she wouldn't have needed to retire due to a medical condition if she did that.

The Deep Six has always been way the hell cooler than the End of Days.

I think he's said before he wishes he had gone that route for the sake of his hips, but chose the leg drop due to it getting a big reaction in Japan despite not being his actual finisher at the time. I think he did sometimes use the Axe Bomber early on, too, just since I could swear it's what he beat Terry Funk with in one of their matches.
