I think I gotta go with mania 38. Stone cold wrestling again against KO, Cody’s return against Seth, HHH retiring symbolically, taker coming out for a proper goodbye to the fans all made this mania the most special since probably 30 IMO. And then we had fun moments like Sami/Knoxville. Only issue is that they snubbed the midcard titles

I think there was arguably more memorable stuff this year than the other two combined. This year admittedly had the advantage of the big Wrestlemania crowd though which makes a big difference. 2020 had no fans in attendance and 2021 was capped at around 25,000 each night.
In terms of legitimate matches/moments that will be remembered fondly for years to come I'd say you've got:
38 - Becky/Bianca. Cody's return and match with Seth. Undertaker's Hall of Fame farewell. Austin/Owens. HHH's in-ring farewell. Zayn/Knoxville. McAfee.
37 - Bad Bunny. Sasha/Bianca. The triple threat and Roman stacking Edge and Bryan?
36 - The boneyard match. The firefly funhouse. Drew beating Brock would be one but no fans really ruined it.

Wrestlemania 38 for me. Night 1 is probably my fave Mania in recent memory.

I mean it feels like clearly Mania 38 to me. Actually felt like a real big scale Mania and had less of the weird Vince booking decisions of Mania 37. Mania 36 in a lot of ways was a good attempt in a bad situation but like, it's never going to rank highly for me because over two nights, there was just so much empty arena wrestling that just doesn't hold up at this point.

36 was hurt so badly by the pandemic/lack of crowds.
38 felt like a WrestleMania, and had a hot crowd throughout. A hot crowd helps.

36 and 37 are two of the worst Manias I've ever personally suffered through. Utterly detested pretty much every second of both of them (yes, even the Boneyard Match), save for the fact that I was happy to be watching wrestling as a form of escapism under the circumstances.
38 was a really good WrestleMania that I would actually rate as one of the best ones I've seen, but for the fact that Lesnar/Reigns is a contender for my least favorite professional wrestling match of all time.

Definitely this year's event, last year's suffered a bit from the rain delay IMO.
I enjoyed Night 1 of WM38 more than Night 2 but overall this year was better.

38 just mainly for Night 1. Night 2 was crap but Night 1 alone makes it easily better all around then 36 and 37 which were both sub par Manias. 36 was hurt by having no funs and 37 was brought down by misery booking and on the night where fans returned no less. Yeah we're glad you're all back hope you enjoy being miserable and bummed out watching all your favorites lose. Thanks.

Wow, I actually thought 37 was best (didn't watch 36, though). Bobby Vs. Drew, Cesaro Vs. Rollins, Bad Bunny, Bianca Vs. Sasha, KO Vs. Sami, Sheamus Vs. Riddle, and the Triple Threat main event. I guess 38 had more memorable moments but I thought the match quality was a lot better at 37. Plus, it was the first PPV in ages with a crowd. And 37 had this, of course:

36 is just going to be so hard to even chart. Only the cinematic matches feel like they are worth the full watch, with maybe Rhea vs. Charlotte as a case study on how to adapt to bad situations.
IIRC, 37 had a good Night 1, but tanked too hard on Night 2 to really compare to 38, which held up far better overall on Night 2 plus arguably had a better Night 1 on top of it.
