Or at least that mostly just have one actor. Sometimes movies/shows have someone else pop up for like a second to give an unexpected moment or swerve ending. I’ve always loved anthology shows like The Twilight Zone, Alfred Hitchcock Presents, etc. and it seems like they do this a fair amount. Not every other episode or anything, but it comes up plenty. An interesting thing is that a lot of times it is a big star doing the one person show, but sometimes it’s a rarely seen actor. And sometimes it’s someone you’ve never heard of, especially if you dig into more obscure stuff. I’ve been revisiting the 1980’s series Monsters and just watched an episode called Habitat. It features Lili Taylor in such an episode. She’s actually a pretty big star or at least a big enough star to be in major movies, have Emmy award nominations, and of course the mandatory Wikipedia page. But I can’t say I’m that familiar with her. Anyway, she was good in this one

Locke is Tom Hardy driving in a car talking on the phone. I think you see like two co workers in the background at the very beginning if I remember right.

There was a series, Up In Town, which was pretty much Joanna Lumley delivering a monologue throughout the whole half hour.

Moon was the story of a lunar miner who learns a big secret about his job. Sam Rockwell is the only actor on screen, although Kevin Spacey voices his computer. Great movie.
The Guilty spends 90% of its time as Jake Gyllenhall working a 911 call center and talking to people on the phone.

There was a film where Ben Affleck was buried in a coffin with a phone. So there was other actors on the call but he was the only one seen. Think it was called Buried.
Evil Dead 2 had Bruce Campbell on his own for a good bit.
And there was a flick I caught a bit of on Netflix called Boat, about a guy who finds an abandoned boat off the coast of Malta, and everything on it is trying to kill him. It was shite though.

For most of its run-time, SILENT RUNNING is about a man stranded in space in like a free-floating greenhouse. There's a couple of drones with him that become his robot pals, but I don't think they talk.

TV series in the UK called Marion & Geoff where Rob Brydon talks to the camera inside his taxi for half an hour. Ran for 2 series if I recall, so there's probably like 12 episodes in this format (been so many years since I saw it that I've forgotten if they're all like it).

Steven Spielberg's Duel is mostly Dennis Weaver being pursued by a truck (who's driver we never see). There are a few other actors in unimportant roles, but for the most part it's just Dennis.

Similar to Buried, there's a 2013 indy film called Detour in which a man wakes up buried inside his car. The full cast is 5 people. He watches a few (clean) home videos of his girlfriend on his phone, and some co-workers appear briefly in a flashback or two, but it's mostly 80 minutes of one guy trying to not die.
