Podcast game basically means a good game to play while listening to a podcast since it's pretty chill and not super frustrating. Something like PowerWash simulator for example.

Simulators are good.
Flight Simulators are good once your in the air
Sports games on the easiest settings are good too

One Piece Mansion? Kinda like a management game where you put guests in a hotel in the correct spots to help give everyone good moods or mitigate bad ones.

Honestly wwe 2k19. That or Elite Dangerous. Skyrim would be good but I mostly still play that for the soundtrack

First ones that come to mind for me are Minecraft or any racing game. I remember spending many of summer nights listening to podcasts while I played Mario Kart Wii online.

Im the oddball that never played video games with the game music playing. Might be cause when I first got into video games the 2600 was the home console . So I would put on a record or cassette and listen to that while playing games.
Still do that to this day. Which is one reason why I have no clue about the music in any NES,Genesis,SNES games.

Most turn-based games (especially SRPGs) are really good to play while listening to podcasts. In this vein, I very highly recommend Valkyria Chronicles and its even more fun sequel, Valkyria Chronicles 4 (VC2 & 3 were handheld games, so they’re not as robust as the two main console games). The original nailed the basics of engaging and thoroughly enjoyable game play, had the most concise story, and is a fantastic start to a series I wish was bigger. VC4 improved gameplay mechanics, added many new options (officer commands, armored personnel carriers, grenadiers, etc), and greatly expanded upon the characterization of your troops (the 1st game explored your 4 mains and a few NPCs but VC4 had many short chapters featuring only the background characters. Btw, perms death is a thing that can happen in the game so their losses will hurt so much more (and sadly is inevitable as well).

Unpacking is a really fun game that doesn't divert much concentration away from podcasts. I second the RPG suggestions. You might have to pause occasionally if they get dialogue heavy, but just running around the map and grinding levels is easy, especially with turn-based RPGs.
