Unless they announce something in the next few days it could be well into the final week before the All Out main event is announced. What other examples are there?
Not only was there no main event but not a single match was announced ahead of time for the first ECW One Night Stand.
I think the main event of Bash at the Beach 1999 was only announced on the final Thunder. WCW probably had a few like this around 1999-2000.
I'm not sure this one counts because they did originally announce a main event (Cena/Orton last man standing) for No Mercy 2007 but Cena got hurt on Raw that week and had to vacate the title. So people bought the PPV just with the vague promise that the WWE title situation would be addressed. On the night the title ended up going from vacant to Orton to HHH and back to Orton.

WWF 1999 must have had some or at least they'd announce them then change every week before the PPV. Summerslam and Unforgiven spring to mind for that year.

I don't know if this really counts but every PS3/360 WWE game story mode always had the PPV main events declared like at the last possible second before the PPV, including Wrestlemania main events.

I remember when I thought it was farfetched that Day of Reckoning 2 just had Raw without a top title for a full year.

Just remembered No Mercy 2006. Was built up as the main event being Booker vs. Lashley with Batista vs. Finlay on the undercard then two days before the PPV they suddenly combined the two matches into a four way.

Didn't they have Daniel Bryan turn heel and cheat his way to the WWE title on the go home for Survivor Series 2018, thereby changing the main event from Brock vs. AJ II to Brock vs. Bryan (WrestleMania 31's main event 3.5 years late).

Another WCW example is Spring Stampede 1999. Awesome show, but the main event wasn't announced until the very end of the go home Nitro.

I know this isn't really the point of the thread, but there have been some times where it seemed the PPV main event was called off and speculation ran rampant about what the replacement would be, only for it to be back on with the same competitors at the last minute.
-Angle vs. Lesnar at WM19 -Triple H vs. Randy Orton at The Bash 2009 (turned into a 3 Stages of Hell match after the announced Last Man Standing Match was given away on TV) -John Cena vs. CM Punk at Money in the Bank 2011
