At least with crypto crashing (again) and Ethereum no longer using video cards and ruining the environment to mine, those 3000 series cards are going to be a hell of a lot cheaper in the coming weeks.

I'm still rockin' a 1060. One day, I'll upgrade! Honestly, a 1060 is perfectly fine for pretty much everything but max settings in top of the line AAA games.
Hell, unless you're really hellbent on ray tracing, 8K HDR, and all that fancy shit for brand new games, something like the GTX 1660 is more than enough for most people who want to PC game. It still has a ton of power under the hood. And unless you have a serious gaming rig and setup, anything higher can be overkill.

Oh, I agree; I haven't really run into anything I couldn't play and I don't need the fancy stuff for gaming. Actually, I've gone back and forth on just upgrading my case as my PC is a pre-built with pretty much no upgrade options for graphics as it's a non-standard case. I dunno.

For me, the only reason I upgraded from my 980ti to my 3080 was to push VR better And I was going to just get a more than adequate 3060ti until that gorgeous purple and green EVA edition went on sale 😍

Some of the pre-built vendors use nonstandard cases like that to discourage aftermarket upgrades. Dell was infamous for this awhile back.

I bought my first gaming PC 2 years ago, this is the card installed
NVIDIA Ge-Force 2060 Super
Not sure how powerful/current that is but for the games I actually play on Steam it's pretty good

2060 Super is a perfectly fine card. It's a slightly beefier version of the regular 2060 card. It first came out in 2019, so while it's a couple of generations old by GPU standards, it's still quite recent.
As it's part of the RTX line, it does ray tracing, which is the major leap forward of this era's GPU's. Power wise, the 60 cards tend to be considered "mid range" before really going into the deep end with performance (and price and power requirements) with the 70 and especially 80 and 90 cards. I think the 60 cards represent a good medium between performance and cost as you'll be able to run any modern game at 1080p with great fps.
