Who are some guys that didn’t face as many big stars as they could of during their run? I’m talking about former world champs or upper midcard legends like Scott hall/piper.
I don’t think Eddie wrestled as many big stars as he could of. He’s been on the same roster as Undertaker, HBK, Hogan, Hall, Nash, Bret Hart, Lex Luger, Macho Man, Sting, Warrior yet didn’t face any of them

Maybe not one on one, but Eddie was part of a Fatal Four Way with Taker that also had JBL and Booker T IIRC.
...actually, Booker T possibly could be another one now that I mention him.

Bret still wrestled a lot of big names but he also missed out on a lot too. If he isn't forced into retirement we probably get a bunch of big matches with him in the early/mid 2000s with the likes of Brock, Cena, Batista, Orton, HHH, Angle, Jericho, Edge, Rey, Eddie, Hardy, RVD, Christian. Maybe he even sticks around long enough to face the Bryan's and the Punk's.

Punk in AEW. We didn't get a match against Kenny, The Bucks, Bryan, Joe, Cody, Cesaro and plenty of others.

Maybe he even sticks around long enough to face the Bryan's and the Punk's. He did wrestle "HBK Sidekick" Triple H on Raw once IIRC. Probably would have wrestled pre-fame Hardy (either one) if he didn't move beyond the level of jobber squashes too.

Lashley. He was on a relatively weak era of Smackdown, then on ECW as it became a developmental program, and then got hurt against Cena and left right after he was going to get a big push on Raw. He then took a sizable break right as the American scene went through a major talent shift and then to TNA after they had lost many of their major names. Then, he went to NXT right as many of the bigger names were moved up and then was in the midcard on Raw for way too long.

A lot of WCW guys are probably applicable, since they kept the cruisers and mid-carders pretty segregated from the main events.

Del Rio is a multiple time world champion and thought the stars of his era but I think it's notable he never faced the part-timers or guys on nostalgia runs.
Some of the women at times the division were weak must count if you exclude any returns for the women's rumble matches.

Stone Cold i would say. We never got Hogan vs Austin, Brock vs Austin or Goldberg vs Austin but should have.
I know Goldberg was debuting the night after Austin retired.

Scott Steiner missed the Invasion Angle and when he came into the WWE, dude was awful in the ring due to a foot injury, and for some reason, was pushed as a face. His feud against Triple H stunk out the joint and that was him done as a Main Eventer in WWE.
He missed out on a lot of potential matches if he had been brought in as a heel from the start and didn't have the foot injury.

Goldberg in WCW did take on a lot of the talent, but we still never got to see him against Benoit, Eddie, Malenko, Savage, Jericho (they did wrestle in WWE), or Mysterio, while in WWE, he missed out on matches against Angle or RVD.
