So, if the Red Mage is a class that is a hybrid of the Black Mage and White Mage....why is it called that and not the Grey Mage instead?

two possibilities due to the sprite limitations... they only had the Black/BLue/Yellow palette for the BM, Thief, and Black Belt and t he Red, White and peach palette for the Fighter, Red Mage, White mage.
So of the colors it was basically yellow wizard with blue skin, Peach wizard with pale white skin, or REd Mage with Peach skin like we got...
alternatively... Red wizards are a thing in D&D and they swiped the name without any of the connotations >_>

Red Mages were also decent fighters. In D&D terms they would be a Fighter Mage Cleric.

Red Mage should have been a job in FFT, like he could equip swords and knives instead of rods/staves, and he could only use low/mid tier spells you already leaned from the White Mage, Black Mage, Mystic, and Time Mage jobs.

Is there any DND concepts that spawned the Blue Mage then? The Blue Mage was only a thing from FF5 onwards. They were over copying D&D stuff at that point

They only had so many colors to work with in the original 8-bit FF and a lot of the dungeons, castles, and towns had lots of gray in them. So a red sprite sticks out more. I think they came up with the design of the sprite first then built the archetype around him. Red Mages were jacks of all trades that could do everything fine (melee, tank, black, and white magic), but not as well as the dedicated jobs like Warrior, Black Mage, White Mage, etc. Red Magic as a concept didn't start coming around until FF5 and even then it was just a selection of a number of Black and White Magic spells already available to the Black and White Mage jobs. The one thing that set Red Mages apart were their versatility and their Dualcast ability that let them cast two spells in the same turn. Then you had the En-spells and Refresh in FF11. While technically not Red Magic (they were categorized under different schools), it was magic exclusive to Red Mages. FF14 is the first game with spells that are uniquely "Red Magic" like Jolt, Scatter, Impact, Resolution, etc.
"Gray magic" also has existed in some FF games like FF6. They were the support and status spells that weren't direct damaging like black magic or healing like what magic. It's also green magic in some of the Ivalice games like Tactics Advance and FF12.

True enough, but their spells have range and no charge time so in theory you can damage enemies before they get in range, maybe put a status effect on them so they're easier to kill once you or them get close. Plus, as I recall, since you can learn from one job and do those skills in another when you change, a red mage is rather redundant when you can do that. Been a while since I played the game, so my memory is fuzzy.

They did add Red Mage to the Tactics Advance games at least. They're a Viera exclusive job that can cast a bit of both black and white magic, have status effects, and can do decent melee damage with their swords. They also have Doublecast.
Even more than being able to cast both black and white magic, Doublecast (and Chainspell in the MMO's) is their signature. Along with using fencing swords and a keen fashion sense. Especially since there are other jobs that can cast both kinds of magic like Summoner and non-FF14 Sages (like in FF3 and Tellah in FF4). Both of those jobs usually have a wider variety of black and white magic spells to use, but are also very much standard mages. They can typically only wear lighter armor and use staffs and rods (or whips if you're Rydia).

How can there be more than one *Final* Fantasy? Is it like Rock vs Cena, Once Twice Undecided in a Lifetime? I believe the story was that Squaresoft was about to go bankrupt and this was going to be their last game....but it was a massive success and saved them from closing.

While the whole "last game before Square went out of business" thing is an urban legend (Square was indeed financially struggling, but not to the point of bankruptcy), it was going to be Hironobu Sakiguchi's last project because he was losing his passion for games. If the game was a failure, he was going to leave the industry and go back to school.
So while it wasn't named such because it was Square's or the Gooch's last planned game, it ended up being pretty appropriate if the worst case scenario happened.
