Say you're Tony Khan, or otherwise are in a position to bring in whoever you want for a Dark, Elevation, or even onto one of the main shows or PPVs/Buy-Ins. However, this is for the sake of one-offs, or close to it. You may potentially hire them full-time, but operate under the assumption this isn't going to be anything more than a one-and-done.
Who are some people you do with this? Veterans who are available, low level people who have never gotten that big of a shot, "weekend warrior" types who have been at this for ages. Who do you book?
If you want, you can maybe go with AAA, MLW, Impact, DDT, or NJPW people and operate under the idea you can do them a favor in turn to be able to borrow a guy, but that's sort of a less fun option for the most part.
For me, I'd book The Barbarian and the Warlord beating some goobers who could bump and feed for them, even if I doubt either guy is terribly agile these days. Also, Scott Norton. Why? F*** it, that's why.
Additionally, I'd bring in Delilah Doom for a try-out since I legitimately think that's actually a good idea.

Dragon Gate is having a really good year, better than the post StrongHearts leaving would lead people to believe. Guys like Ben-K, Shun Skywalker, SB KENTo, Madoka Kikuta, Takuma Fujiwara (who as a rookie looks like a 10 year vet) are all killing it. I would love any of them to get a chance (beyond a match on Dark that never airs)

I'd bring in Sid just for the sheer visual of a decent entrance for him at this stage of his life. Tony can afford to get the rights to "China White" which is what his WCW song is a ripoff of so his entrance would make me pop. Plus I'm sure he'd be his goofy self which would make me smile.

I know the Twitter account thing turned out to be BS (Not his fault though), but Buff Bagwell having a one off match or appearance would be cool.

For an older veteran type, Ultimo Dragon would be incredible.

I don’t know if I’d want to limit it to a one-off, but I had an idea to showcase Wardlow a little more while simultaneously getting a quick nostalgia pop.
Anyway, one Dynamite Wardlow comes out to cut a promo on MJF whenever their feud gets reignited. But he gets interrupted by…a loud bird cawing. It’s Raven!
Raven cuts a quick promo and just when it looks like Raven and Wardlow are going to have an impromptu match, out of nowhere one of Raven’s old cronies shows up attempting to blindside Wardlow. Offhand both Stevie Richards and Lodi are still working. Heck, even Ron Reis had a a couple matches in 2019 so if you want to bring in someone big AND obscure there you go.
Anyway, Wardlow makes short work of Richards/Lodi/Whoever and pins him after multiple powerbombs. It looks like Raven is going to escape unharmed but in a call back to him dropping the US title to Goldberg the fans throw Raven to Wardlow. Wardlow knocks Raven down with a clothesline. Wardlow grabs the mic and says no more cronies are going to stand between him and his target. This references not only Raven’s Nest/Flock but also how MJF previously delayed matches with Wardlow by having others stand in for him. Wardlow ends the segment by powerbombing the hell out of Raven.

If he's available and affordable, Goldberg on PPV could be a fun one off in the right match. Team him with Darby and Sting.

Madusa appeared a couple of times for AEW during the women's tag team tournament to present the winners with an award, though I don't think she wrestles anymore.

He was technically in the crowd in the early days as a tease for The Exalted One, but Raven getting a one-off would be really neat.
Just have him and Darby do a staredown of generational edgy boys, lol

Miu Watanabe, although I'd cheat and have a one week shot.
Dynamite - Looks set to be a jobber against Nyla Rose but powers her into a giant swing and slam. Assuming she can manage it, if not go with Hayter in a close losing effort.
Rampage - The more important part, find a way to get her in the ring with Claudio so they can do a giant swing together.

For an older veteran type, Ultimo Dragon would be incredible. Dragon has stated in recent interviews that he wants to work one more match with Chris Jericho before hanging it up, so that one may be happening sooner rather than later.

If he's up for coming out of retirement for a match, I would also bring in Martin Kirby for a Dark/Elevation one shot against someone like Cage or Archer when AEW finally does some shows in the UK.
I just want to see the Zoidberg Elbow one last time before he eats a Chokeslam or a Weapon X.

Arisa Nakajima or Tsukasa Fujimoto would be awesome, imo you can flip a coin between who of them is best in the world on any given day for me, but given their health and personal life status etc, either or both are great for a one off, I hate that politics mess it up lol
