I'll start with 2007 and Michaels and Undertaker going at it until the end. And in 2008, they start the Rumble. Great booking there.
2020 with Brock Lesnar. I think it ages very well. He had so many side feuds. Kofi. Rey. Ricochet. And the show down with Keith Lee. Making Morrison look like a bitch.
2008 with Piper and Snuka. The rest of the superstars stop fighting each other and just watch. Morrison points to them and distracts Punk. Then kicks him.

Agree with 2007 with Shawn and Taker ending the Rumble. You can argue this was the start of one of the best periods for both guys.
1990: “WHAT A MATCH UP THIS IS GOING TO BE!!! HOGAN AND THE WARRIOR!!!” After the failure of the Zeus experiment, we had no clue what Hogan was doing for Mania 6 and boy, did this answer the question. That and this is actually a pretty underrated Rumble!
1992: Really, you just need to give the year and not find much argument between the quality of the Rumble, the absolute gem of the commentary with Bobby and Gorilla and Flair being crowned champion. Amazing match.
2020: Brock wrecking shit for almost 20 minutes, Drew getting f***ing made with the elimination and just when you think they’d done it all, we count down to number 21…

1988: "Hacksaw" Jim Duggan wins it by, funny enough, being smart and pulling down the ropes when One Man Gang charges at him.
1989: The Warlord comes in... and then goes right back out.
1990: Hulk Hogan and The Ultimate Warrior stare each other down.
1991: Bushwhacker Luke comes in one side of the ring and goes out the other.
1992: Sid Justice throws Sgt. Slaughter across the ring, and he hits the turnbuckles so hard that he bounces over the ropes.
1993: Yokozuna and Earthquake face off.
1994: Bret Hart and Lex Luger eliminate Fatu and Shawn Michaels after they whipped each guy towards the other.
1995: Mo runs and gets thrown out by King Kong Bundy in 3 seconds.
1996: Razor Ramon runs into the match to get at The 1-2-3 Kid.
1997: Jerry Lawler leaves the announcers desk to enter the match only to get punched out by Bret Hart in 2 seconds.
1998: Mick Foley enters the match 3 times.
1999: Um... Kane fighting off the orderlies, I guess.
2000: Too Cool and Rikishi's dance party, that leads to Rikishi dumping out Too Cool.
2001: Kane whacks Steve Blackman with a weapon as he tries to skin the cat back into the ring.
2002: Maven eliminates The Undertaker.
2003: Brock Lesnar F-5's Matt Hardy out onto Team Angle.
2004: Ernest Miller comes out, dances, and gets eliminated.
2005: Batista and John Cena's perfect botched double elimination, leading to Vince McMahon coming out, hurting himself, and having to restart the match while sitting on his butt (weird sight).
2006: Rey Mysterio's cool elimination of Randy Orton, winning the match.
2007: The Undertaker and Shawn Michaels pull off the Best Rumble Finish Ever.
2008: Triple H throws Mick Foley into a Cactus Clothesline on Elijah Burke.
2009: John Morrison saves himself from elimination with some parkour.
2010: Shawn Michaels gets eliminated and then superkicks everyone.
2011: Rey Mysterio 619's Jack Swagger out of the match.
2012: Kofi Kingston's handstand.
2013: Bo Dallas eliminates Wade Barrett.
2014: Roman Reigns eliminates 3 guys at once, 2 of whom are his Shield buddies.
2015: Bubba Ray Dudley finally gets to compete in a Rumble match (shame that D-Von hasn't).
2016: AJ Styles makes his WWE debut.
2017: Mark Henry throws Jack Gallagher out while he's holding an umbrella.
2018: Men's-Heath Slater can't enter because everyone keeps attacking him until Sheamus throws him in, which he repays the favor by immediately eliminating Sheamus. Women's-Everybody gangs up on Vickie Guerrero.
2019: Women's-Becky Lynch manages to talk her way into the match and then wins it, which won me the Pick 'Em game I was playing in at another forum. Men's-Nia Jax attacks R-Truth and enters the match.
2020: Women's-Otis catches Mandy Rose but then drops her after Sonya Deville gets thrown onto them. Men's-Drew McIntyre eliminates Brock Lesnar.
2021: Women's-Bianca Belair and Rhea Ripley manage to keep their feet off the floor and slide back into the ring. Men's-Edge and Christian back together!!!!
2022: Women's-Sonya Deville goes onto commentary until she learns that Cameron is Naomi's former partner, runs in, and beats her up. Men's-Kofi Kingston blows his annual "saved from elimination" spot.

1989 first two entrants are Ax and Smash and they proceed to beat the living shit out of each other until #3 Andre the Giant comes in. Amazing booking and a memorable spot that holds up 30+ years later.

The next guy comes out, it'd Roddy Piper, you get the perfect "oh for f***s sake, this guy!" on Flair.
The best facial in any Rumble, number 2 being Scotty coming out to face Kane/Taker in 2001.
