It's probably Hey Arnold for me. The big ones I was into as a kid were it, Rocko, Jimmy Neutron, Angry Beavers, Invader Zim, and Fairly Oddparents (and even then I don't think I saw anything post-Channel Chasers), but Hey Arnold's the only one I've really revisited as an adult and know that it's still aged very well (granted I'm sure if nothing else Zim has too), and really just have a level of emotional investment and attachment to it that isn't matched by a lot of other media.
I think the next closest competitor is probably Avatar? I think my biggest hesitation on going with that one instead is season 1, having a third of the show that's notably weaker than the rest of it (though still pretty good) does bring it down a bit. Feel like if seasons 1 and 3 were as good as season 2 is it'd probably run away with it but they're not so I'm inclined to go with Hey Arnold instead.

Ren & Stimpy and Ahhh Real Monsters are the only ones I like enough to buy on DVD.
For me Nick's live action stuff was better than their cartoons. But Nick is also a channel I stopped watching in 94ish.

I didn't have cable for about 7 years when some of those shows were big so I mostly missed out. That said, in university my friend introduced me to Avatar: the Last Airbender and that show is awesome. I would argue that it has some of the best character development I've seen in a series animated or live-action.

Both Avatar shows, Rocko, Teenage Robot, pre-movie Spongebob, Zim, 2012 Ninja Turtles, Doug, Angry Beavers, Hey Arnold, Loud House.
I don’t know what the consensus on All Grown Up was but I recall enjoying it. I watched a fair amount of CatDog but it doesn’t hold up as well as the previously mentioned stuff for me.

All Grown Up was alright, should have lasted longer though, and I wouldn't mind a third spin-off where they're all adults with their own babies.

I think As Told by Ginger and My Life as a Teenage Robot are the ones I've been most curious to revisit. Liked them both a lot as a kid, but remember not exactly seeing all of either. Kind of get the sense both are probably better now than they were then, and I did watch a few As Told by Ginger episodes a year or two ago, but really can't say for sure on either and am curious. Say those and not a Nicktoon but Dave the Barbarian are probably the most, "I really should watch this again and see how it is now," cartoons I can think of, maybe the Weekenders.
Maybe will try one of them after I finish binging through Lower Decks, I dunno.

It's tough. Peak Spongebob's great, Avatar as well, and Hey Arnold. I'm going to say Invader Zim, if only because the movie was really damn good and kind of elevated the series as a whole in its way. Rocko's movie did the same to a degree. A couple of people said Doug. Doug's an interesting one in that in some ways, I actually kind of like it more now than I did as a kid, maybe since the level of anxiety he displays on the show is something I am more sympathetic to now.

Probably Doug. As an anxiety ridden fat kid at school, Doug and his constant day dreaming gave me some shelter.
Rocko has to come 2nd. I really liked hey Arnold, rugrats. I even tried getting into wild thornberries. I was a real Nick kid.
