Sorry for repeating myself as I always say the same when this topic comes up.
Douglas replacing Denholm in The IT Crowd. Denholm was actually a good character and Chris Morris is one of the greatest comedic minds in the UK but Douglas is just a better comedy character and Matt Berry was perfect casting.

Kitana and Baraka for Sonya and Kano...
At least that's what 9 year old me thought.

Frank Coniff's "TV's Frank" taking over for Josh Weinstein's "Dr. Erhardt" from the start of season 2 on Mystery Science Theater 3000 (And by extension Kevin Murphy taking over the voice of Tom Servo from that latter actor) Nothing against Josh per say, but Frank (and Kevin) were great additions to the cast and the the writers room and helped the show as a whole move forward from pretty good to all timer. Agreed. It's not like the predecessors were bad, but MST3K kept its quality with its cast replacements. Well between KTMA, Comedy Central, and Sci-Fi. And we're doing VAs (Weinstein/Murphy Servo), are we? This is cheating, I feel, but Linda Feige Melissa Raccoon is replaced by Susan Roman Melissa?

Kitana and Baraka for Sonya and Kano... At least that's what 9 year old me thought. I was 19 when Mk2 came out and was disappointed when Sonya was excluded. She was my main in MK1 (though because we randomly chose characters I got good with all of the characters, especially Johnny Cage). When she returned in MK3 modeled after Kerri Hoskins this time (who amazingly looked even better in the costume at 50 than she did at 25, and she looked fantastic at 25), I was happy but admittedly didn’t use her nearly as much.

Mentioned in the other thread, vaguely, but this one I'll call a push
Lorraine Pascale for Kardea Brown/Carla Hall on the judging panel of the [X] Baking Championships. Oh, I sorely still miss Lorraine, never got over her ;-) But I like Carla and Kardea too.

Rebecca for Diane in Cheers.
The will they/won't they with Sam had been done from every angle and had taken over the whole show, getting tiresome, this gave them YEARS more.

I started watching Cheers with my parents when Rebecca was on the scene and only saw the Diane seasons when they were repeated years later, I'm not sure I would have enjoyed the series anothing like as much if they were my starting point. The Sam/Diane relationship was toxic, they didn't want to be together but neither party wanted to be happy or see the other happy either, and for the most part their dating habits were kind of an ugly mirror of oneanother, Sam dated so he could be seen with someone physically attractive and Diane used dating to social climb.

Geoff Edwards replacing Mike Richards and Blake Emmons on Starcade and the New Chain Reaction (1986) respectively. It helped that Edwards filled in for Cullin for a couple of weeks on the original Chain Reaction in 1980. Trunks and Goten replacing Gohan as the kid co star of Dragon Ball Z. Thousand Sunny replacing Going Merry in One Piece (I know its a ship and not a person)

I'm not going to go into why I don't rewatch this show any more because it'll be a massive buzzkill on this thread - I really should change my signature - but yeah, this is 100% true. Morris felt like some weird removed character separate to the rest of the show, and he wasn't doing onscreen work at that time so only really did it as a favour if I remember, and ejected at the earliest possible time. Douglas was part of the actual cast, and he felt like it.

Grandad on Only Fools and Horses was good, but after he died and Uncle Albert came in, he was just so much more iconic

Grandad on Only Fools and Horses was good, but after he died and Uncle Albert came in, he was just so much more iconic Albert was absolutely a great replacement but I think Grandad was just as iconic a character if not moreso. I can’t name a scene with Albert that is anywhere near as iconic as Grandad unscrewing the chandelier. The show got better overall around the time Albert came in but I’ve always put that down to John Sullivan getting better as a writer and the show greatly benefitting from moving to a (regular episodes) running time of 50 minutes from 30 minutes.

True--that was one of the show's most iconic and memorable moments, especially how proud Grandad looks as he walks back down. But Albert had more iconic moments and was just more memorable. Just his appearance alone is unforgettable. I loved Grandad--he was great, but when I think of the show, it is always Del, Rodney and Uncle Albert that first come to mind.

This one is always so funny because at first it’s like, “what are you doing? He’s so good!” Then Douglas is just perfect. Swapping an A for an A+
