I have a DVD that has 8 hours of material on it, but my DVD player won't recognize or play it. Is this something to do with the settings of my DVD player, or is my DVD player out of date? It was one of the earlier models.

It could be ALL sorts of things. I've worked at a video store the last 8 1/2 years (managed most of the time), so I come across this ALL the time. Here's a list of possibilities, starting with the most common one of all. Of course this isn't all the possibilities, just the most likely.
1) Your DVD Player may need cleaning. So many people NEVER do this. And many more assume that because DVD A works even though DVD B didn't, it means it was the disc and not the player. This is wrong. A dirty DVD player will sometimes play one movie perfectly, skip slightly on another one and then not even start up for a different one.
2) It could just be the age of your machine showing.
3) Some DVD Players and DVD's just don't get along. For example, the DVD player at our store will not play ANY copy of Saw. However, at my house, customers and other employees all the Saws work fine.
4) The DVD might just be messed up or made of a low quality. Some companies make cheap discs with cheap imprinting process. I can't remember the name, but there was one company I got a bunch of Martial Arts DVD's (not the company I ordered from, but the actual DVD production company) from and it was pretty much a 50/50 chance they'd work for people. Some longer discs have a lower quality imprinting as well in order to fit more on the disc, but once again that usually has to do with the company.
5) Check the regions on your DVD and your DVD player. Make sure they are the same, or at least one of them are region free.
