The coconut over Snuka's head was pretty funny. His backstage segment with Jericho at WMXX was funny.
I marked out like a schoolgirl at WMIII when he basically came out as the original tweener. He was still a heel, really, but Adonis was the bigger heel and Piper got an enormous reception.
Ahhh, good times.

When Piper was on Politically InCorrect with Bill Mahr, and Mahr said that fans we're "in on the joke". Piper then proceeded to pull down his pants, show Mahr the scare from his hip and say "Does this look like a joke to you"

Its hard to pick one, the guy has had a lot of terrific moments.....
That being said, him winning the IC title at the Rumble is my choice. That was a great moment to see him finally win a singles belt in the WWF. The match itself was fun and the crowd was white hot. The pop he got when the Mountie's arm dropped the 3rd time was completely off the charts

WM 19. The crowd's reaction of "Who's that...f***, it's Roddy Piper!" was awesome. It was just a great surprise and added to the match. The last guy either Hogan or McMahon would want to see just shows up out of nowhere....Brilliance....

Not today! She be mine!" I second those. Also, on the Funeral Parlor, Heenan came out with Flair's WCW title, talking about how he was the Real World's Champion. Piper left the broadcast booth and said the Real World's Champion was Hulk Hogan. Heenan then said, "If Ric Flair were here right now, he'd have you shining his belt." Piper then says, "I'll shine it. In fact, I'll give it a nice spit-shine." He then proceeds to hock a big loogie on the WCW belt and throw it on the ground in one of the first on-air jabs at the competition. The Halloween SNME where he was coked out of his mind trying to scam the kids was classic. From Survivor Series 91: "The Undertaker as champ ain't no different than David Duke being prez."
