Stephanie McMahon used to model for WWF merchandise catalogs back in the 80's when she was a kid. Shane McMahon was sometimes used as a ref and a backstage official, like when he tried to stop Miss Elizabeth from coming to ringside at Wrestlemania 8. (Go to 1:07 in this video):

He never really was a full-time WWE competitor, but christopher daniels made several appearances as a WWF jobber in 1998, and also appeared in the hardy boyz chef boyardee commercial. He was also one of the Los conquistadors during 2000 (in segments where edge and Christian weren't playing them)

Don't know if this really fits the parameters, but Alex Shelley jobbed to Simon Dean in a dark match the night Cena was drafted to Raw (I found it out later when I actually knew who he was). And I believe Samoa Joe had a match or two on Jakked or Metal or whatever C-grade show it was.

I'm drawing a blank on an exact date and situation (other than it was before 2001), but I seem to recall a skit that Charlie and Russ Haas took part in with Edge & Christian. I think the Haas Brothers (as well as fellow indy guy Billy Reil) were playing over-the-top fanboys of the team.
