Well, why don't you just ask The Director:

A very candid interview from Stephen Hopkins (given, I'd estimate, close to a year after the movie came out).
I'm always interested in the movie industry, with a tendency to lean towards the things that go wrong, so I enjoyed the read. I highly doubt we'll ever get a "What Went Wrong with AvP" from Paul W Anderson.
If you don't want to read it, I'll bullet point parts for you:

{Spoiler}
- This was Hopkins' 2nd US Movie, the first being Nightmare on Elm Street 5
- He ended up on Predator 2 due to convincing by Joel Silver.
- Joel Silver fell out with 20th Century Fox over the problems with Die Hard 2, kind of ruining that input.
- It was Hopkins' idea to add the opening street shoot-out, the subway scene and the Alien skull at the end in P2.
- Arnie did read the script and wanted to make it but couldn't juggle it in with other scheduled projects (Like Kindergarten Cop.
- "The whole idea was to market the Predator as the hero this time"
- The Producer(s) pushed hard for Hopkins to use Steven Seagal after Arnie dropped out. But Hopkins said "I can't bear him or his squeaky voice" and opted for Danny Glover instead.
- Bill Paxton was Hopkin's choice, Maria Conchita Alonso and Gary Busey were Silvers', though Hopkins originally wanted John Lithgow.
- The film was originally supposed to be set in New York, not LA, but they couldn't afford to make it in NY, plus it was winter, which would go against "the Predator is drawn to hot places" thing so LA was chosen for climate and ease of filming.
- Hopkins said Dark Horse's comic book adaptation of the film is crap.
- Hopkins said the bad reviews and box office performance of P2 has affected him personally and professionally (especially since his NOES5 was also a flop).
- He blames Fox for not letting him finish it properly. Would've preferred to put in more scenes with Glover and crew realizing what was happening, cut out some action.
- Says he was offered Alien 3 but wishes David Fincher "Good luck" on it.
