Not the best, but an overlooked one might be The Quick and the Dead.
Cartoonish at times, but quite good, especially Gene Hackman's character.

I remember doing a list of the top 50 a few months ago based on votes from this message board and suprisingly, the Outlaw Josey Wales.....which didnt have many first place votes, but was memorable to so many.........won.

High Noon strips the Western down to its barest essentials; The Wild Bunch shows it at its most honest and, in a sense, its mythopoetic height.
The Wind and Stagecoach are the prime influences on the genre as a whole, imo.

Butch Cassidy and the Sundance Kid for me.
