Mr Perfect Curt Hennig
When I got into wrestling, I quickly got over my initial Hogan cheering thing that one would expect of a little kid, and immediately got hooked on Mr Perfect and the Genius. I liked that he was a guy who boasted about being that damn good and actually could prove it wasn't just bragging. Their segments always amused me and his matches always made me go "Oooooh cool!"
Then, when I got back into wrestling again via WCW, he was with the nWo, who I adored. I hated Flair and the Horsemen so I loved it when he double crossed them. Then he was in the West Texas Rednecks, on the surface, a completely idiotic gimmick. And yet, he somehow made it completely awesome. I totally still sing their songs. I loved his comeback in 2002 too. Plus I had a huge crush on him in the late 90s....really huge.
Now I'm a good bit older and I can look back and appreciate that it wasn't just my youthful markiness, but he was actually brilliant. He set the model for the sort of wrestler I've always liked since and was the one who started me down the path of liking heels the most. His matches are always great and he radiated charisma. I can't see him on a video without smiling. I like what Bret Hart talks about in his book about the best wrestlers being in the high 20s when you rank look, mic skills and in-ring ability out of 10. I don't think anyone could have been closer to a perfect score than Perfect himself.

Loving the fact that Jericho is getting some mentions. Same goes for me. He's everything that I like in a wrestler done extremely well. Great wrestler who can put on good matches with anyone at any level. He's funny when he needs to be, he's serious when he needs to be, and he knows how to reinvent himself. He's actually creative. Chris Jericho. Jerichoholic since 1996.

Tito Santana. Seriously. He ALWAYS made me care, even in the dark days where he had to act like a bullfighter. Just a solid pro.
Then... Tajiri, probably. And Regal. ...hm, Bossman.
I think I just like solid, athletic professionals with enough charisma to last, and who can play a variety of roles.
Also got a huge soft spot for Ron Simmons, because he overcame his really weird early WCW career to become, again, just a really solid performer as a veteran.

I go back and forth between Undertaker and HBK on this on a regular basis, but more often than not I'll go with Undertaker.

Shawn. I've gone through phases with others (Benoit, Angle, Jericho), but in the final analysis, I think it's always gonna be HBK.

Mick Foley. The fact that he was able to break all the norms when it came to being one of the best in the world is what puts him over the rest for me. That and all the things he's done outside of the ring with his charity work and his books among other things. He's one of the few wrestlers I could imagine myself sitting down and having an extended intelligent discussion with.

'Taker. I basically grew up watching him, and he left an indelible mark on me as a child so frankly it doesn't matter what matches or angles hes been in, no matter how goofy the Deadman got, no matter about BikerTaker.
Undertaker will always be irreplaceable in my mind.
EDIT: Macho is a close second and if I was 10 years older, he'd probably be #1.
