..To ruin them or dilute their influence.
Example, Mankind vs. Undertaker, Hell in a Cell.
Instead of Foley getting off the stretcher after getting initially tossed off the cell and running back in, what if it was insisted that he be stretchered out, and the match ended there?
The entire good majority of the match, with the second cell bump, the iconic imagery of the tooth up his nose, and the final finish with the thumbtacks, would all be nonexistent, as would Foley's crazy perseverance. He wouldn't seem nearly as unbreakable, as much as a human damage cushion as he wound up, and that match could very easily have wound up forgotten.
Yeah, you would've still had the highlight clip of the initial toss off the cell, but with Edge and Christian and the TLC matches not too far around the corner, the match would've lost a TON of its defining moment-ness, and really, it would've likely been diluted since they wound up doing similar bumps anyway, like with Rikishi. Mankind might've never skyrocketed like he did, and he probably would've been written off as even more of just a glorified stuntman.
So basically, this is "For want of a nail", only with wrestling situations.

Imagine - Hulk Hogan vs Andre The Giant
The 93,000 fans that have jam packed the Pontiac Silverdome have waited all day and night to see Hogan take on the Giant. The unstoppable force meets the immovable object. The two of them are finally in the ring. The dust has settled, and they're about to settle this score once and for all in front of the largest crowd the WWF will ever see. They're rabid. The white noise gets louder and louder, the atmosphere gets so electric and so thick it's like nothing on earth.
They square up. Nothing like it on earth. Gorilla Monsoon sums the moment up in one sentence. Nothing like it. They come face to face. A dark brown liquid slowly stains the back of Hulk Hogans tights. The look on his face turns to horror and his mahogany skin turns an off white. The mess runs down his legs and eventually craps out into the middle of the ring. Andre backs off and Hogan is left alone. One man among 93,000 with crap all over his ass, legs, and in the ring. He tries to salvage the situation by grabbing at it and diving out of the ring with handfuls of it, running towards people in the front row with it, pleading with them "IT'S JUST CRAP BROTHER, DON'T BE SCARED" trying to prove its safe by rubbing it on himself.
The cops pile in, the show is cut off the air immediately and the WWF goes out of business.

Steve Austin's bloody after a back and forth brawl all over the arena with Bret Hart, after months of hatred between them. Finally, Bret locks in the Sharpshooter, and Austin immediately starts tapping with both hands and begging Bret to let him go.

Vince making the call to have Giant Gonzalez go over Undertaker at WrestleMania IX, just to build steam towards a SummerSlam 1993 pay-off where Taker would then go over to end the feud.

Yeah, Mick Foley falls off the Cell, and a State Athletic Commission worker shuts the entire show down, and the WWE is sued by a bunch of angry moneygrabbers for emotional distress.

On a not-quite-so-hilarious note. Savage-Steamboat, WM 3. Instead of George Steele being in Steamboat's corner and costing Macho, the IC title, I would have booked Bruno Sammartino in Steele's role as cornerman/screwjob enabler. That would have given a double payoff for the angle (considering Sammartino had defended Steamboat's honor at the start of the storyline), and would have scored a decent nostaligia-pop for Bruno.

Money In The Bank 2011
Punk vs Cena finally happens. Punk threatens to leave the company with the belt. The heritage of the WWE title is on the line.
Cena squashes Punk in 5 minutes and ends the show standing tall. The internet explodes, Cena is booed out of the building, Punk gets pissed and leaves, and WWE still continues to somehow make money.

Non WWE, but still Robert Roode vs Kurt Angle Bound for Glory 2011: Instead of the finish they went with in building a star out of Roode after the brilliant build up and having him beat Kurt Angle on TNA's grandest stage, Angle wins through some silly rope-grabbing shenanigans and they completely blow it

Hogan Vs Sting at Starrcade: Sting goes over cleanly without pointless screwjob finish.
Oh wait, that was the right way to do it.

Original Nexus beatdown...
Instead of the ending we got, Cena gets up and AA's all 8 of them simultananeously into a box marked FCW.

Raw 6/27/11: CM Punk's "worked shoot"
This promo began his rise to main event status. It led to an epic match at MITB and while WWE has seemingly dropped the ball since, Punk is still in the main event and has a title shot at Survivor Series. No more 4 minute PPV losses to the Big Show.
This Raw took place in Las Vegas and Punk had the crowd in the palm of his hand. But imagine if it took place in front of an awful crowd. The 2 worst crowds in recent memory were in Topeka and Tulsa. So let's say it happened in Tulsa. The second Punk starts his promo, the "WHAT" chants begin. The crowd thinks this is so fun, yelling WHAT at a heel, but they're really taking away from an awesome promo. People at home don't really get into it and Punk himself becomes flustered. He has been told he can talk about whatever he wants, so he begins to rant about Oklahoma, the South, Jim Ross, and how much he can't stand the WHAT chants.
After the promo, Punk is wished well in his future endeavors by Johnny Ace. Vince thinks it would be a good way for him to leave, and that maybe in a few years he could come back. Punk storms out and vows to never return to the WWE again. MITB becomes Cena vs Mysterio. Both men and the big wigs backstage wonder why the Chicago crowd gives them a Brock vs Goldberg treatment during the match. It is seen as a huge blunder and Vince loses his COO spot to Triple H, who then begins to feud with Cena. Punk goes on to return to ROH at the Chicago TV tapings on August 13th, debuting an awesome white shirt that he had been planning on showing WWE execs. The sales of this shirt give ROH a huge cash infusion and Punk gets a huge deal from ROH, and says he will stay there forever.

Wrestlemania XIV, Austin is backstage...moments before his match. Ready to win the belt and realize his dream. Undertaker approaches him and tapes his wrists. Shawn goes over Austin clean as a whistle within five minutes.

What's interesting is that if WWE had the current writing team in 1997, your description is probably how it would have happened.

WrestleMania X-Seven:
Austin takes out Vince instead of taking his chair, he beats the Rock on a stunner, no heel turn, no handshake with Vince.
